Baked Fish Recipes For Your Restaurant?
Baked Fish Ingredients 1 fish (1500g to 2000g) 1 can of oysters 1 can of shrimps 1/2 cup bread crumbs Salt and cayenne pepper 200g butter 1 onion A little chopped fine parsley Cracker crumbs Parsley Lettuce leaves Sliced lemon
Action a. Place the fish in a baking dish, with a stick across each end, to keep the head and tail out of water.
b. Par-boil until nearly done.
c. Take the meat from the bone, without breaking the bone or head.
d. Pick the meat up, removing all small bones, and skin.
e. Add oysters and shrimps, and chop, not too fine.
f. Hold the mixture together, with the bread crumbs, and sprinkle, with salt and pepper.
g. melt butter on heat, add onion,, chopped parsley and fry slowly until nearly done. Then mix with the above ingredients.
h. Mould the mixture on the bone, of the fish, shaping as nearly like the original, as posssible.
i. Sprinkle with cracker crumbs, and place in oven, baste with melted butter, until nearly browned.
j. Garnish with parsley, lettuce leaves, and sliced lemon.

Ingredients 2 tablespoons butter (melted) 1 tablespoon flour 1/4 teaspoon salt Pepper 125 ml fish stock 125g cream 3 eggs (well beaten) 400g chopped salmon
Action a. Over the fire, stir in flour, salt, pepper, and stock and cream to the butter.
b. Stir until smooth and cook for 5 minutes.
c. Remove from the fire, and beat, into it the eggs and chopped fish.
d. Turn into buttered baking dish, and bake standing in a pan, of hot water (not boiled) about 20 minutes.
