Shall we start with Chicken Custard Recipes?

Chicken Custard

Ingredients
1 small chicken
750 ml cold water
1/4 teaspoon salt
4 eggs

Action
a. Wash, drain and dry the chicken.

b. Break the bones and stew it,
in a pot of cold water,
with a little salt for 2 hours.

c. Strain, and add the eggs.

d. Heat this till it almost boils,
then pour it into little moulds,
and let cool.

Boneless Chicken Breast Special

Ingredients
1 large chicken breast
4 eggs (beaten)
1/2 teaspoon salt
1 teaspoon grounded ginger
500g cream

Ingredients for Sauce
2 tablespoons butter
375 ml stock
375 ml cream
3 tablespoons flour
Preparation
Mix all ingredients and cook until smooth.

Action
a. Cook the chicken breast, and chopped it fine.
Season with salt and ginger.

b. Add 4 eggs separately, and add cream gradually.

c. Put the mixture in large mould,
set it in hot water and bake slowly.

d. Turn out, slice and serve with the sauce.

Some fried chicken recipes!

Simple Chicken

Ingredients
1 large onion (chopped)
1 chicken
Cold water
Flour
Salt and pepper
Oil
500g fresh tomatoes
6 green peppers

Action
a. Put the onions in the cold water,
for 40 minutes and dry it and brown it.
Put aside.

b. Cut up the chicken, sprinkle the pieces,
with flour, salt and pepper.

c. Stir fry in oil, which remains,
in the frying pan.

d. When the chicken is brown, add tomatoes,
green peppers, and onions.

e. When the gravy is thick enough,
add hot water to prevent burning,
of the vegetables.

Simple Chicken Pie

Ingredients
1 chicken (1000g)

Cream Gravy Ingredients
750 ml chicken liquor
3 tablespoons flour
200g cream
3 tablespoons melted butter
Salt and pepper to taste

Preparation
Combine all together, and mix well.

Biscuit Ingredients
240g flour (sifted)
2 teaspoons baking powder
2 tablespoons butter (melted)
250 ml milk
1 egg
1/2 teaspoon salt

Preparation
Beat all together.

Action
a. Cook chicken until tender,
about 1 hour.

b. Remove bones and cut in good size pieces.

c. Line a greased baking dish,
and fill it with the chicken pieces.

d. Pour the cream gravy over.

e. Drop pastry in spoonful on top,
of the chicken and gravy.

f. Bake until biscuit are golden brown.

Classic Chicken Pie

Ingredients
1 chicken (2000g)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon onion salt
1/4 teaspoon sage

Biscuit Ingredients
(20 servings)

240g flour
240g cake flour
1 teaspoon salt
2 teaspoons baking powder
5 tablespoons butter
250 ml milk

Preparation
a. Sift the flour well, and add butter.

b. Cutting this lightly into flour.

c. Add milk slowly, stirring lightly,
into fluffy dough.

d. Spread on a floured board,
and cut very lightly.

Action
a. Place chicken in a large pot,
and season well with the rest,
of the ingredients.

b. Boil the chicken 3 hours, keeping well covered,
with water until meat falls from the bones.

c. Remove from stock and when partly cooled,
cut into 2 cm pieces.

d. Thicken stock to the consistency,
of gravy and place with meat,
in a deep baking dish.

e. While piping hot, cover top,
with fluffy biscuit.

f. Bake in preheated 200°C (392°F) oven,
until golden brown.

I love to use chicken breast meat for varieties of
chicken recipes.

Special Chicken Pie

Ingredients
200g chicken breast (cubed)
1 teaspoon ginger (minced)
2 teaspoon oyster sauce
1/4 teaspoon sugar
1 teaspoon potato starch
1/4 teaspoon cooking wine
Pastry

Filing Ingredients
1 medium onion (sliced)
1 hard boiled egg
1 carrots (diced)
50g green peas
1 teaspoon chilli powder
(optional)
1 tablespoon butter

White Sauce Ingredients
2 tablespoons butter
2 tablespoons flour
250 ml milk
1 teaspoon salt
1 teaspoon paprika powder
1 teaspoon pepper

Preparation
Mix all till smooth.

Action
a. Season chicken breast meat with ginger,
sugar, oyster sauce, potato starch,
and wine for 30 minutes.

b. While seasoning, line a greased baking dish,
with plain pastry.

c. Put in filings, chicken breast meat,
and pour over this with the white sauce.

d. Place a covering of pastry on top,
and bake in preheated 200°C (392°F) oven,
till golden brown.

This is a wonderful dish from my chicken recipes
collection.

Wonderful Stewed Chicken

Ingredients
2 chickens
1000 ml milk
1000 ml stock
1 onion
1 carrot
A few allspice
Salt and pepper
Grated nutmeg
60 ml sherry
1 canned mushroom
1 canned green peas
Flour
30g butter
Seasonings

Action
a. Cut up 2 chickens into nice joints,
throw them into lukewarm water with a pinch,
of salt added.

b. Let them blanch for 10 minutes,
then drain them dry.

c. Dip them in flour, and fry,
with a little butter till lightly brown.

d. Place milk and water in a stew-pan,
with onion, carrot, allspice, nutmeg,
and some seasoning.

e. Boil together 40 minutes, thicken,
with a little flour and strain through a fine sieve.

f. Place the joints of chicken in the sauce,
add mushrooms, and sherry. Simmer together,
for 40 minutes.

g. Place green peas in a stew-pan,
with a little seasoning and 60g butter.

h. Make a border round each dish,
with some, mashed potatoes, place the chicken,
in the centreand decorate the peas round the potato border,
then it is ready.

Egg Sauce Chicken

Ingredients
1 young chicken
50g butter
Salt and pepper
1 teaspoon flour
Broth
1 egg yolk (beaten)
Half lemon

Action
a. Cut the chicken into pieces.

b. Put it in the saucepan with butter.

c. Season with salt and pepper.

d. When it is half browned, sprinkle,
with flour to give it color.

e. Complete the cooking with broth.

f. Remove it from the pan, and put it,
on a plate.

g. Beat the lemon into the egg yolk,
and pour it on the sauce of the chicken.

h. Allow it to simmer for some minutes.

i. Pour on the chicken and serve hot.

Lovely Fried Chicken

Ingredients
2 young chickens
Salt and pepper
1 onion (sliced)
Flour
1 canned sweet pepper
Tomatoes (cubed)
A few bay leaves
1 sprig thyme

Action
a. Clean and cutup chickens.
b. Sprinkle with salt and pepper,
and fry in hot oil.

c. When done, put in a dish,
and set aside.

d. Fry onion, add flour for thickening.

e. When brown, add sweet peppers,
fry a little.

f. Add tomatoes, bay leaves, and thyme.

g. when sauce is done, put in the fried chicken,
and boil for 5 minutes.

Fried Chicken Sauce

Ingredients
2 tablespoons butter
1 green pepper (chopped)
1 tablespoon flour
Salt and pepper
Rich milk
Mushrooms (optional)

Action
a. Heat the butter till bubbles,
add green pepper.

b. Let cook slowly for 3 minutes.

c. Add flour, salt and pepper to taste.

d. Add enough milk to make,
a smooth thickened sauce.

e. Add cooked chicken and heat through,
then add mushrooms.

Sherry Chicken

Ingredients
1 chicken
1 medium sized onion (fine chopped)
50g butter
Salt and pepper
Broth
60 ml Sherry wine

Action
a. Cut the chicken in big pieces and put it,
in the saucepan.

b. Add onion and butter, season,
with salt and pepper.

c. When it is well browned, add some broth,
and complete the cooking.

d. Sift the sauce through a sieve,
to remove excessive fat,
from the sauce.

e. Put the chicken back on the fire,
with sherry.

f. Remove it from the fire as soon,
as the sauce begins to boil.

Fried Chicken Breast

Ingredients
1 chicken breast meat (boneless)
Salt and pepper
1 egg (beaten)
Bread crumbs
(finely grounded)
Butter
Lemon

Action
a. Cut the breast in very thin slices.

b. Season with salt and pepper.

c. Dip the slices in egg, leaving them,
for 3 hours.

d. Sprinkle with bread crumbs and fry,
in the butter.

e. Serve with lemon.
