Chocolate Dessert Recipes

Chocolate Sago

Ingredients
2 level tablespoonfuls,
ground chocolate
100g sago
240 ml water
1 stick cinnamon
50g chopped citron
100g chopped almonds
110g sugar

Action
a. Soak sago over night, and drain the next morning.

b. Put it in a double boiler with water,
and boil until thick.

c. Add cinnamon stick, and citron.
Cook 30 minutes.
d. Remover cinnamon stick, and add almonds,
sugar and chocolate.

e. Remove from fire as soon as the sugar,
is dissolved. Set away to cool.

f. Serve with cream flavoured.

Chocolate Frosting

Ingredients
60g Unsweetened chocolate
120g sugar
3 teaspoonfuls butter
60 ml milk
2 teaspoon sherry wine

Action
a. Place all ingredients in a saucepan.

b. Cook to 120°C or 248°F.

c. Add sherry wine.

Chocolate Cake Sauce

Ingredients
1 egg
230 ml milk
1 teaspoonful cornstarch
(dissolved in a little cold milk)
100g sugar
2 teaspoonfuls ground chocolate
1 teaspoonful vanilla

Action
a. Scald milk and add the corn starch milk.

b. Beat egg and add to the mixture.

c. Add sugar, chocolate, and vanilla.

Chocolate Sauce

Ingredients
1 tablespoon cornstarch
2 tablespoons cold water
500 ml scalded milk
220g sugar
55g chocolate
1 teaspoon vanilla

Action
Combine all together and boil till smooth.

Chocolate Cake Icing

Ingredients
56g Ground chocolate
120 ml Boiling water
220g pulverised sugar

Action
a. Place chocolate in a saucepan,
with the boiling water.

b. Set on the stove for a few minutes.
Stirring constantly.

c. Remove from fire, and stir in sugar,
until perfectly smooth.

Chocolate Cake Cream

Ingredients
450g cream
4 tablespoonfuls ground chocolate
500 ml milk
100g sugar
2 tablespoons gelatine or agar
125 ml cold water
1 teaspoonful vanilla essence

Action
a. Soak gelatine in cold water,
until soft.

b. Add it in the milk, which has been scalded,
with the chocolate, stirring until dissolved.

c. Remove from fire, add sugar,
and essence.

d. Set it in a pan of ice water,
stirring until it begins to thicken.

e. Add the cream whipped to a stiff froth.

f. Line a mould with peaches,
turn in the mixture.

g. Set in cold place until firm.

h. Remove the mould and serve,
with whipped cream.
