Cooking Asparagus Asparagus Cream Soup Ingredients A 1 bunch asparagus 500 ml stock 1 slice onion (minced) 1/4 teaspoon salt 1/8 teaspoon pepper 500 ml milk
Ingredients B 2 tablespoons butter 2 tablespoons flour
Preparation Mix the butter and flour.
Action a. Cook the asparagus 20 minutes.
b. Drain and reserve the tops.
c. Add stock, onion, and boil, for 30 minutes.
d. Rub through sieve, and thicken, with the flour mixture.
e. Add salt, pepper, milk and the tops.

c. Break off the lower part of the stalks, as far down asthey will snap.
d. Then tie into bundles with white cord, for individual serving.
Cooking Asparagus a. Cook asparagus standing up in a pot, of boiling slightlysalted water.
b. Cook them uncovered, for 20-25 minutes.
c. Cook the tips for 5-10 minutes.
d. Liquid left in the pot, should be saved, for soup or sauces.
Note:
a. You may cook them first standing, then laid flat, in the water, to finish cooking the tops.
b. You may cut them into 2 cm lengths, for creaming.When boiled whole, to be serve, with butter or sauce. c. You may also cook the asparagus, with just enough water to keep them from burning. d. Add the butter when the vegetable, is put on to cook. The water should be all absorbed, when they are tender. e. You may need to add more water, from time to time.
------------------ Boiled Asparagus Preparation a. Cut off lower parts of stalks as far down, as they will snap. b. Wash them, remove scales and tie them, in bundles. c. Cook in boiling salt water for about 15 minutes, or until soft. d. Drain, remove the string, and season, with salt, pepper and butter or serve, with white sauce. Note: During cooking, leave the tips, out of water for the first 10 minutes.
