My mum has many personal Cooking Recipes. She worked with some English and American families, when she was young. She taught us quite a numbers of her own recipes. I remembered she roasted those pork slices, with very crispy rinds. She said that was her own creation. I learned Ham and sausage recipes, when I started to make my own breakfast. We used more canned ham and canned sausages , in those days. ------------------ Let's see first the Ham recipes! Do you like Baked Ham? Baked Ham One Ingredients 1 thick slice from center, of a ham 3 cloves 1 can of mushrooms 1 tablespoon sugar salt (optional) Action a. Cover the ham with enough cold water, and cook for one hour with cloves and sugar.
b. Pour off all broth, except one cup full.
c. Roast the ham in the 180°C (356°F) oven, for about 3 hours.
d. Mix the broth, milk, mushrooms, and flour, in a pan. Cook until it is thicken as gravy.
e. Pour the gravy over the ham.
f. Add salt to taste. -------------------- Cooking Recipes Baked Ham Two Ingredients 1 slice of roasted fresh ham 2 baked apples Garnish 1 tablespoonful meringue 1 browned sweet potato Action a. Drop meringue on each apple and put, in a 200°C (392°F) oven for a few minutes, to brown.
b. Arrange this on the platter, around the nicely browned roast.
c. Browned sweet potato may also be arranged, just inside the apples. ------------------- Baked Apples 2 large green apples (cored) 1 teaspoon Brown sugar 1 teaspoon Cinnamon 1/2 teaspoon butter 80 ml hot water Action a. Preheat 180°C (356°F) oven, for 10 minutes.
b. Put 1/2 of the sugar, cinnamon, and butter on top of each apple.
c. Place the apples in the baking pan.
d. Pour hot water into the pan, and set in the bottom of the oven.
e. Bake for about 1/2 hour.
f. Stick a fork into them, and try them. When they are done, they are juicy and soft.
g. Put them in a pretty plate with all the syrup, that has been cooked out of them.

Cooking Recipes Baked Ham Three Ingredients One 2.5 inch thick smoked ham 6-8 Irish potatoes (Peeled and slice) Salt and pepper Milk Sprig of parsley (garnish) Action a. Place the ham in a frying pan.
b. Brown slightly, then place in a baking dish.
c. Lay the potatoes on top of the ham.
d. Add salt and pepper, and cover with milk.
e. Cover the lid tightly and bake, in a 150°C (302°F) oven for about 1 hour.
f. Add more milk, when it becomes dry. ------------------ New Baked Ham Ingredients 1 medium sized ham Sweet cider 120 ml maple syrup Action a. Put the ham in a pot and cover, with sweet cider.
b. Let it simmer gently for 3 to 3.5 hours.
c. Skim frequently to remove the grease, as it rises.
d. When tender, take off and remove the rind.
e. Cut the fat on top into diamonds, and in each diamond stick a clove.
f. Rub over the top of the ham maple syrup.
g. Place in the 150°C (302°F) oven, and bake slowly for 45 minutes. Yummy... ------------------ Cooking Recipes Ham Casserole Ingredient 1 ham with rind (cut 2 inches thick) 250 ml milk 110g brown sugar Rings of fried apples Action a. Dissolve sugar partly in the milk on top, of a hot stove. b. Pour over ham the mixture. c. Cook all for 2 hours in a casserole. d. Serve with the apple rings.

Meat Loaf One Ingredients 450g round steak 1450g shoulder pork 450g bread crumbs (browned and ground) 2 eggs 1teaspoon salt 1 teaspoon white pepper 1 teaspoon celery salt 750 ml milk Action a. Mix all together.
b. Place the mixture in a baking dish.
c. Bake for 1 hour, in preheated 180°C (356°F) oven. ------------------ Meat Loaf Two Ingredients 900g ham (grounded) 450g pork loin (grounded) 2 eggs (beaten) 1 cupful of rolled cracker crumbs 250 ml milk 1 cupful of tomatoes Pepper to taste Action a. Mix all togather. Except tomatoes.
b. Put them in a baking pan, and pour the tomatoes over them.
c. Bake in 180°C oven (356°F) for about 2 hours. ------------------ New Meat Loaf Ingredients 500g grounded beef 250g cold cereal 1 egg 1 teaspoon salt 1 teaspoon seasoning 1/2 teaspoon white pepper Bread crumbs or cracker crumbs Action a. Let the cereal stand covered in the oven, or at a warm place till heated through.
b. Work into it the meat and the rest, of the ingredients using the hand.
c. Use enough bread crumbs to make the proper consistency for, forming a loaf.
d. Bake the loaf in the oven, spinkle a little hot cooking oil.
e. When desired, baste with a tomato sauce.
Special Cooking Recipes Sausage Recipes Sausage Making Ingredients 3000g lean pork 1000g fat pork 500g loaf bread (soaked thoroughly in water) 50g salt 25g White pepper 2 medium sized nutmegs (grated) Action Mix all together, put in the chopper. ------------------ Sausage and Banana Ingredients Little sausages Hot water Flour Oil Action a. Prick casings of sausages in several places, with toothpick.
b. Put them in frying pan, cover with hot water, and simmer 45 minutes.
c. While waiting for the sausage, peel bananas, scrape it, cut in halve length-wise, dredge with flour, and fry till brown.
d. Drain the sausages, when it is done.
e. Arrange alternately with strips of toast, on a hot platter surrounded with bananas. ------------------- Easy Sausage (16 cakes) Ingredients 500g hamburger steak 1 tablespoon sage 1.5 teaspoons savory 1.5 teaspoons Thyme 500g cold cooked oats 2.5 teaspoons salt 1/2 teaspoon pepper 1 egg (beaten) 2 tablespoons cooking oil Action a. Mix all thoroughly.
b. Form into a flat cakes.
