Cream Puff Recipes

Cream Puffs

Ingredients for Puffs
250 ml water
75g butter
120g flour
1/2 teaspoon salt
4 eggs

Ingredients for Filing
50g sugar
4.5 tablespoons corn starch
1/4 teaspoon salt
500 ml milk
2 eggs
1 teaspoon vanilla extracts

Preparation
Cook all in double boiler,
until thick.

Action
a. Bring water and butter to boil.

b. Add flour and cook until mixture leaves aside,
of pan, stirring constantly.

c. Remove from fire, cool and add eggs one,
at a time, beating thoroughly after each one.

d. Drop 1 tablespoon in round balls,
about 5 cm apart.

e. Bake 20 minutes in preheated 200°C oven,
or 392°F.

f. And 20 minutes more in 180°C,
or 356°F oven.

Cream Pie

Ingredients
2 egg yolks
2 egg whites
200g sugar
1 teaspoon baking powder
120g flour

Action
a. Sift the flour and baking powder together.

b. Beat the yolks and sugar together.

c. Add the flour and lastly the whipped egg whites.

d. Bake this cake mixture in 2 layers,
and place between them when cold.

e. Just before serving, a thick layer,
of whipped cream.

f. Cover the top piece with boiling icing,
or a cream filling.
