Custard Recipes

Basic Custard

Ingredients
4 egg yolks
1000 ml fresh milk
250g granulated sugar
1 tablespoon agar-agar
(mix with la little cold milk)
200g raisins
200g strawberry preserves
200g candied cherries
Citron (thinly sliced)
Wine or sherry
500g whipped cream

Action
a. Boil the milk, add sugar, and stir,
in well-beaten eggs.

b. Add agar-agar mixture into custard,
and let cool.

c. Put in freezer.

d. When half frozen, add the fruits,
and wine.

e. Stir in last the whipped cream.

f. Freeze hard.
