Dim Sum Recipes
220g minced meat
1/2 teaspoon dried orange peel
1 spring onion (chopped)
1/2 teaspoon minced ginger
a. Wash, peel and dice the water chestnuts.
b. Soak the orange peel in the luke warm water,
till soft and mince.
c. Put all the ingredients through a grinder,
to a paste.
d. Combine all seasoings in a bowl,
e. Add this to the meat and mix well.
Season for 30 minutes.
f. Place the meat paste into the mixing bowl,
and pound till firm.
110g wheat starch
1/4 teaspoon salt
125 ml boiling water
1 teaspoon butter
a. Sift the wheat starch and salt,
in a mixing bowl.
b. Pour in boiling water and stir very fast.
c. Cover for one minute, then add the oil,
1 tablespoon light soy sauce
1 teaspoon corn flour
1 teaspoon sugar
1 teaspoon wine
1/8 teaspoon pepper
125 ml water
1 tablespoon oil
a. Roll the dough into a thin long sheet.
b. Divide into 40 equal portions.
c. Roll each into a small thin round dough.
d. Fill in the meat paste and press the edges,
to shape like a basket.
e. Flatten the top with a knife and garnish,
with the parsley.
f. Place in a greased preheated bamboo steamer,
and steam for 5 minutes on high heat.
