Easy Eggplant Recipes

Baked Savoury Eggplants

Ingredients
1 medium sized eggplant
(pared and diced)
Slightly salted water
1 tablespoon onion (chopped)
1/2 cup sweet pepper (diced)
2 tablespoons parsley
1/4 teaspoon sage
1 tablespoon vegetable butter
3 tablespoons brown flour
250 ml eggplant liquid (cooked)
1 slice of buttered bread
Raw tomatoes (sliced)

Action
a. Cook eggplant slices in a pot,
of slightly salted water till tender.

b. Drain and save the water.

c. Put chopped onion, sweet pepper,
sage, and butter into a small saucepan.

d. Let simmer over the fire,
for a few minutes, but not brown.

e. Add flour and stir in the eggplant liquid,
cook to a smooth gravy.

f. Add the cooked eggplant.

g. Line an oiled pan with thin slices,
of buttered bread.

h. Pour over it half of the eggplant mixture.

i. Cover with slices of tomatoes.

j. Add Add another layer each of bread,
eggplant, and tomatoes.

k. Rub a slice of bread through a colander,
over the top.

l. Press down with a spoon,
to moisten the crumbs.

m. Bake in 180°C or 356°F oven,
for 30 to 40 minutes.

Note: You may use sweet marjoram instead,
of sage.

Easy Eggplant Recipes

Sauté Eggplants

Ingredients
1 medium sized eggplant
2 eggs
1 tablespoon vegetable butter (melted)
400g cracker crumbs
Salt to taste

Action
a. Pare and dice the eggplant.

b. Cook in enough boiling water,
with salt to taste.

c. When it is render, drain well.

d. Beat the eggs with the butter,
and add the mixture to the eggplant.

e. Add the crumbs, mix well and pour,
into a well oiled skillet.

f. Heat gradually, turning with a spatulas a few times,
until partly browned and thoroughly heated through.

g. Serve immediately.

Eggplant Fritters

Ingredients
1 medium sized eggplant
Slightly salted water
180g flour
2 teaspoons baking powder
1/4 teaspoons salt
160 ml soy milk
1 egg (well beaten)

Action
a. Wash the eggplant and cook,
in salted water until soft.

b. Mix and sift the dry ingedients,
add milk gradually and egg.

c. Mash eggplant and remove large piece,
of skin.

d. Add warm eggplant to batter,
and beat mixture until thoroughly mixed.

e. Fry in deep vegetable oil.
