Gluten Free Cornmeal Bread
Ingredients
120g white cornmeal
120g yellow cornmeal
250 ml water
1 teaspoon salt
1/2 teaspoon cayenne
200g chopped soy butter
Action
a. Mix all together.
b. Form into rolls about 15 cm long.
c. Roll in greased paper,
and bake in 180°C or 356°F oven,
for 1 hour.
d. Serve hot.

Gluten Free Spoon Bread
Ingredients
1000 ml soy milk
120g yellow cornmeal
3 eggs (beaten)
1 tablespoon sugar
3 tablespoons soy butter
1/2 teaspoon salt
Action
a. Heat milk, stir in meal and cook,
until it thickens.
b. Remove from fire, add salt, sugar and butter,
and then the eggs.
c. Pour into a baking dish,
and bake in 200°C or 392°F oven,
for about 30 minutes.
d. Serve hot with honey, syrup or butter.
Note: You may replace cornmeal,
with potato meal.

Corn Cake
Ingredients
500g cornmeal
625 ml boiling water
1 teaspoon sugar
1/2 teaspoon salt
2 tablespoons soy butter
Action
a. Dissolve the sugar and salt,
in the water.
b. Work the butter into the cornmeal,
then add the boiling water.
c. Cover and stand 10 minutes.
d. Shape into oblong cakes 6-7 cm long.
e. Bake in 200°C or 392°F oven,
for about 20-30 minutes.
