Home Made Italian Food. Desserts and Marmelade
Shall we create our one and only Home Made Italian Food, and add them to our Restaurant Recipes Collection? Italian Desserts Almond Syrup Ingredients 200g sweet almonds (with 10 bitter ones) 625 ml water 1000g granulated sugar 2 tablespoons orange flower water Action a. Skin the almonds and grind them very fine.
b. Moisten them from time to time with flower water.
c. When the paste is formed, dissolve the latter, in 1/3 of the water.
d. Filter the juice through a cheese cloth, squeezing hard.
e. Put the paste, back in the grinder, and grind again.
f. Filter again with another third, of the water.
g. Repeat c and d for a third time.
h. Put on the fire to obtain the liquid.
i. Before boiling, add the sugar.
j. Mix, stir and boil for about 20 minutes.
k. Let it cool, then bottle and keep, in a cool place. ------------------ Delicious Ice Ingredients 140 ml water 55g sugar 4 egg yolks 140g whipped cream Vanilla Action a. In a saucepan, mix and heat the water, sugar and egg yolks.
b. Stirring continuously.
c. When it begins to stick to the ladle, remove from fire and whip to a stiff froth.
d. Mix with whipped cream, and add vanilla.
e. Put it in a mould, pack with ice, and salt.
f. Keep in the freezer for 3 hours.
------------------ Marmalade and Apricot Ingredients Ripe apricots 400g granulated sugar to 500g pulp Action a. Remove the stones, put them, on heat without water.
b. While they boil, stir with a ladle, to reduce them to pulp.
c. When they have boiled for 30 minutes, rub them through, a sieve to separate the pulp, of the fruit from the skins.
d. Put them back on heat with sugar.
e. Stir often with the ladle, until the mixture reached the firmness, of marmalade.
f. When ready, remove from the fire, let it cool.
g. Put in vase well covered and with a film, of tissue paper dipped in alcohol, so that the air may not pass in. Note: When putting a teaspoon in a plate, it flows slowly, then it is ready. ------------------ I hope you will try all the Home Made Italian Food.
