b. Simmer in butter. Parboil sweetbread, and brown in butter.

e. Add flour to butter and some cream, and milk.

Sardine Salad Ingredients One head of lettuce One bunch of cress A little parsley 2 apples 1 beet 2 sardines mayonnaise dressing Action a. Wash, pick over and drain the lettuce, cress and parsley.

More salads and Fruit Pies? This lunch is very worth! Prune Whip Ingredients 250g prunes 50g sugar 2 egg whites 1/2 tablespoon lemon juice Cream Action a. Wash and soak the prunes over night.
b. Cook them in the same water, till quite soft.
c. Remove the stones and press them, through a potato masher.
d. Add sugar and cook 5 minutes.
e. Beat the egg whites to a very stiff froth.
f. Add this together with lemon juice, to the prunes pulp.
g. Stirring lightly with a fork. h. Put all in a buttered shallow baking dish, and bake about 20 minutes in a 150°C or 302°F oven.
