1000g fresh scallops
Cracker crumbs (fined)
Salt and pepper
Slices of lemon
(dipped in parsley)

1 tablespoon water

b. In a hot wok, add oil,
and stir fry the ginger until fragrant.
c. Add the crab pieces, fry continuously,
till 80% is cooked.
d. Add wine, add garlic and chilli sauce.
e. Cover with lid until the sauce boils,
and the crab meat is well done.
f. Add spring onion, and thicken,
with corn flour.
1 canned crab meat
250 ml milk
1 tablespoon butter
1 tablespoon flour
1 teaspoon onion juice
a. In a double boiler, melt butter,
and stir in flour.
b. Add onion juice and pepper.
c. Serve on toast.
