Beef Brisket Recipes
Beef Steak Casserole
500g round steak
(1 to 1.5 inch thick each)
2 carrots (cubes)
2 turnips (cubes)
6 thiny onions
1 bay leaf
1/2 tablespoons kitchen bouquet
375 ml boiling water
Salt and pepper
a. Sear the meat on both sides,
in the hot frying pan.
b. Remove to the casserole,
with the other ingredients.
c. Cover and cook gently for 60 to 90 minutes.
Note: The sticking piece, shinbone and brisket,
may also be served in the same way.
They will require longer cooking.
1500-2000g round or rump beef
Slice of bacon
A few peppercorns
Stalk of celery (chopped)
500 ml stock or water
a. Brown the meat on both sides,
with the bacon fat.
b. Chop the vegetables.
c. Put the meat in the casserole,
with the vegetables around it.
d. Add the stock or water and cook,
in 200°C or 392°F oven for 3 hours,
e. When done, make a brown sauce,
using the juice left in the casserole.
