Blackberry Cake One
340g blackberry jam
3 tablespoon sour cream
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cooking soda
a. Mix well and bake in layers,
in a preheated 180°C or 356°F oven,
for about 15-20 minutes each.
b. Spread white icing between.
Blackberry Cake Two
500g sugar (sifted)
12 eggs (beaten seperately)
100g blackberry jam
200g dark molasses
500 ml brandy or whisky
1 tablespoon cloves
2 tablespoons cinnamon
1 tablespoon mace
1 tablespoon allspice
100g chopped nuts
100 ml vinegar
1 teaspoon soda
250g candied orange
a. Put the flour in a bread-pan,
and brown to a dark colour. Do not burn it.
b. Beat the eggs seperately, then together.
c. Cut the citron in very thin slices,
and dredge with flour.
d. Dredge the fruits with flour and chop the figs,
and crush the nuts.
e. Heat the butter and sugar to a cream,
and add eggs alternately with the flour.
f. Add molasses, jam, brandy, and spices,
and then the nuts.
g. Stir the fruits in lightly, and just before putting in the pan,
add the vinegar, in which the teaspoon soda is stirred.
h. Pour foaming into the mixture.
i. Put in layer of the mixture, then sprinkle the citron over it,
then another layer, and so on. The last layer must be mixture.
j. Bake slowly in 150°C or 302°F oven,
for about 4 hours or longer.
k. When cold, cover with icing flavoured,
with a little citron essence.
