Bread Pudding Recipes

Brown Bread Pudding

Ingredients A
2 tablespoonfuls of bread crumbs
125 ml milk
Some sugar
A little cream

Ingredients B
250 ml milk
2 egg yolks
Sweeten to taste
Flavour with vanilla or lemon

a. Make a custard from B ingredients.

b. Pour the custard whilst hot,
over the bread crumbs.

c. Beat the egg whites to a stiff froth,
with some sugar and a little cream.

d. Stir lightly together,
pour into a buttered pie-dish,
and bake in a preheated 180°C oven,
or 356°F for about 20 minutes.


Bread and Butter Pudding

Stale bread
Butter (melted)
Stoned raisins
500 ml milk
2 egg yolks
2 tablespoons sugar
Plain pudding sauce

a. Cut the bread into thin slices.

b. Remove the crust and dip,
in melted butter.

c. Arrange them in square cake dish in layers,
alternating with layers of raisins.

d. When the dish is full, pour over it a mixture,
of milk, egg yolks, and sugar only use as much,
as the bread will absorb.

e. Bake in preheated 180°C,
or 356°F oven for 20-30 minutes.

f. Turn it into a dish and serve,
with a plain pudding sauce.

Note: The bread must be dry and crisp,
and hold the shape of the mould.

Bread Pudding (No milk)

1.5 cup stale bread crumbs
Boiling water
1 cup of fruits
2 tablespoon butter(meleted)
2 egg yolks (well beaten)
Sweeten and spice to taste
A meringue
2 egg whites

a. Put bread crumbs into a bowl,
and cover with boiling water.

b. When soft, mix with them a cup,
of any fruit on hand.

c. Add melted butter and beaten egg yolks.

d. Beat all together thoroughly,
sweeten and spice to taste.

e. Put in buttered dish and bake 20 minutes,
in preheated 180°C or 356°F oven.

f. Make a meringue with the egg whites.
g. Spread on finished pudding,
and brown lightly in oven.

h. Dot generously with home made jelly,
when served and no sauce is required.
