Cashew Chicken Recipe

Chinese Cashew Chicken

125g chicken fillet (diced)
70g cashew nuts (shelled)
1 tablespoon soy sauce
1 teaspoon Chinese wine,
or sherry
1/4 teaspoon chopped shallots
A dash of pepper
1 egg white
110 ml cooking oil
3.5 teaspoons chicken,
or beef stock
1 teaspoon salt
3 pieces sliced ginger root
1 teaspoon corn flour
(mixed with a little water)
Bean flour

a. Combine salt, ginger root, shallot, soy sauce,
bean flour, and a dash of pepper.

b. Mix thoroughly and get ready for use.

a. Put cooking oil into pan,
and when it reaches boiling point,
pour in the cashew nuts.

b. Fry them in deep oil, until brown,
and crisp. Strain over a receptacle.

c. Mix the egg white and corn flour water,
together thoroughly in a bowl.

d. Put the diced chicken fillet,
in this bowl and mix,
until they are evenly coated.

e. Par boil the chicken rapidly,
in the boiling oil, then strain off the oil,
in the same way as the cashew nuts.

f. Put 1 tablespoon of oil into frying pan.

g. When it is piping hot,
put the prepared diced chicken,
into it and stirring with a ladle.

h. Add the wine, stock and seasoning,
and mix thoroughly.

i. Pour in cooked nuts and stir briskly,
for a few minutes, not too long.

j. Fry them until the evenness of absorption,
of the gravy is attained.

k. Serve hot.

Note: You may replace cashew with walnuts,
when desired.
