Chinese New Year Food

On Chinese New Year Eve reunion dinner,
we cook all types of meat, soup,
and vegetables. We often have fruits,
for desserts.

Different families have different,
recipes. I am going to show you,
our family's recipe.


Meat Bean Curd Rolls

Ingredients A
1 piece bean curd sheet
165g potatoes
(steamed and mashed)
80g pork (minced)
1 tablespoon dried shrimp
(wash, soaked and minced)
1 spring onion (fine chopped)
1/2 tablespoon cooking oil

Ingredients B
1/4 teaspoon salt
1 teaspoon sugar
1/2 teaspoon wine
1 teaspoon light soy sauce
Little white pepper
1/4 teaspoon sesame oil
1/2 tablespoon corn starch
(mixed with 1/2 tablespoon water)

Mix all well.

a. Season the minced pork with 50%,
of the ingredients B, seasoning sauce,
for 15 minutes.

b. In a bowl, combine mashed potatoes,
pork, shrimps, spring onions and the rest,
of the seasoning sauce and mix well.

c. Clean carefully the bean curd sheet,
with a clean damped towel,
to remove the excess salt.

d. Spread thin layer of potato mix,
onto the bean curd sheet,
and roll it up like spring rolls.

e. Seal with the corn starch water.

f. Lay them in a greased steamer,
and steam for about 12 minutes.

g. Remove and leave to cool.

h. Cut each into 2 cm in length.

i. Fry in deep hot oil till golden brown.

j. Drain and dish.

We used to make Vegetarian Rolls,
on first day. Because we wanted no meat,
on that day.


Chinese Cooking Recipes

Chinese Spare Ribs

3 slices spareribs with bones

1 tablespoon light soy sauce
1.5 teaspoons sugar
1/2 teaspoon minced garlic
1/4 teaspoon white pepper

Some corn flour

a. Rinse the ribs and pat it,
with back of the knife.

b. Marinate it in the seasonings,
for 15 minutes.

c. Apply flour and fry until golden.

Note: Ordinay days, this can go,
with noodles soup.


Chinese Cooking Recipes

I would like to show you my mum's,
special recipe. We often had it,
on the New Year Eve,
and the second day of New Year.

Chinese Roast Pork

600g Pork with rinds (slices)
vinegar, or lemon juice

Five Spices powder
2 tablespoons Cinnamon
1 tablespoon Nutmeg
12 pods Star Anise
2 tablespoon Fennel
2 tablespoon Szechuan pepper

a. Wash the pork and dry them thoroughly.

b. Prick the rinds with plenty,
of holes with fork.

c. Brush the vinegar carefully,
over the rinds.

d. Brush little salt and spices,
over the meats. Season a while.

e. Place the pork upwards (rind top),
in the roasting pan.

f. Place the pan on the top shelf,
in the 220°C or 428°F oven.

g. Roast the pork for 25-30 minutes.
