Nine Layers Pudding

1550 ml coconut milk
300g sugar
1/4 teaspoon salt
270g rice flour
90g corn flour
1/2 teaspoon colouring

a. Heat the coconut milk in a saucepan.

b. Add and dissolve the sugar and salt.

c. Sift the corn flour and rice flour together,
in the sugar mixture.

d. Filter the batter through a fine strainer.

e. Split the mixture into 2 portions.

f. Stir colouring into one portion.

g. Heat a greased steaming tray.

h. Pour 250 ml coloured batter into the tray,
and steam for about 15 minutes.

i. When ready, pour one layer of white batter on top,
and steam for 10-15 minutes.

j. Repeat the same to the 9 layers.

k. Steam 15 minutes more for the last time.

L. When it is set, cool it and cut,
into diamond shaped pieces.

White Fungus Jelly

10g jelly
30g sweet almonds
10 bitter almonds
2 apples (peeled and grind to a paste)
250 ml water
Fruit syrup or rock suagr to taste

a. Soak the jelly in a bowl,
of cold water, till soft.

b. Drain and cut into small pieces,
and set aside.

c. Grind the almonds with 250 ml water,
till smooth.

d. Strain it to almond juice and set aside.

e. Add jelly into 750 ml boiling water,
and boil for about 20 minutes.

f. Add almond juice and apple paste,
and boil hot for 10-15 minutes.

g. Add rock sugar to taste.
