Chinese Restaurant Recipes

Chestnut Chicken

1 tablespoon soy sauce
1 chicken
1 onion (sliced)
30g dried mushrooms
(soak and clean)
1 piece fresh ginger
250g chestnut
(shelled and blanched)
2 tablespoons oil
1 tablespoon wine
1 tablespoon cornstarch
(mixed with 1 teaspoon water)
1 teaspoon salt
2 teaspoons sugar
750 ml water

a. Clean chicken and cut into small pieces.

b. Heat frying pan, add the oil,
and fry the onion, until brown.

c. Add the chicken and mushrooms, and fry.

d. Add soy sauce, salt, sugar, wine,
and cornstarch. Cook until brown.

e. Put into saucepan add water,
and simmer until tender.

f. When it is done, there will be,
about 250 ml gravy.


Chinese Crab Omelet

6 whole eggs (beaten)
1 canned crab meat
1/2 onion (chopped)
2 tablespoon cooking oil
1/4 teaspoon salt
2 teaspoon cooking wine
1 teaspoon soy sauce
2 tablespoons soup

a. Heat oil hot in a saucepan.

b. Fry onions then add crab meat,
with the wine and soy sauce.

c. Dish up and put aside.

d. Scramble eggs with a little oil in a pan.

e. Add soup and the crab, mix well,
and fry together for a minute or two.


You will see immediately the whole range,
of seafoods coming on your way.
