Mocha Coffee Layer Cake

Filling Ingredients
375g butter
4 tablespoons coffee
165g pulverised sugar
1 tablespoon of vanilla

a. Cream butter and sugar.

b. Add the coffee and vanilla alternately,
and little by little, into the butter,
and sugar mixture.

c. Mix thoroughly until all dissolved.

Cake Ingredients
200g sugar
110g butter (creamed)
4 egg yolks (beaten)
4 egg whites (beaten)
125 ml milk
150g ground chocolate
240g flour
2 teaspoons baking powder

a. Cream the butter and sugar together.

b. Add all according to the orders,
and mix well till smooth.

c. Bake in a 180°C or 356°F,
preheated oven for about 45-50 minutes.

d. Remove and cool on the rack.

e. Slice into 2 layers and spread the filling,
between the 2 layers of cake.

125g non sweeten chocolate
100g granulated sugar
125 ml clear coffee
Whipped cream

a. Boil chocolate, sugar,
and water together.

b. Add the coffee and top,
with whipped cream.


Coffee Muffins

1 large tablespoon butter
2 large tablespoons sugar
250 ml sweet milk
2 eggs (beaten)
3 teaspoons baking powder
240g flour (sifted)

a. Cream the butter and sugar together.

b. Add eggs and milk. Beat well.

c. Add flour and baking powder,
mix well.

d. Sprinkle with cinnamon.

e. Bake in 200°C or 392°F oven,
for 20-25 minutes.

Coffee Ice (2 Servings)

1/2 tablespoon dried instant coffee
1 tablespoon boiling water
1 tablespoon syrup
500g vanilla ice-cream
50g pure chocolate (grated)

a. Combine the coffee, boiling water,
and syrup in a pan.

b. Put on fire, stir till the coffee,
and syrup are dissolved.

c. Cool it.

d. Mix the coffee mixture,
with the ice-cream.

e. Add the grated chocolate,
and mix well.

f. Put the mixture in an clean container,
and cover it.

g. Put it in the freezer,
and freeze till set.

Ingredients A
360g flour
1 teaspoon salt
250 ml milk
1/4 teaspoon cinnamon powder
55g butter
5 teaspoons baking powder
1/4 teaspoon nutmeg
165g sugar
2 eggs

Ingredients B
55g butter
200g brown sugar
1/2 teaspoon cinnamon powder
30g flour
1/8 teaspoon salt

a. Sift all dry ingredients together.

b. Add butter, eggs and combine,
with milk.

c. Stir until smooth and pour,
into shallow buttered pan.

d. Cover with well blended ingredients B.

e. Bake in preheated 175°C or 347°F oven,
for about 30 minutes.


Chocolate Layer Cake

Cake Ingredients
100g unsweetened chocolate (grated)
4 tablespoon all purpose flour
2 teaspoon baking powder
220g sugar
5 beaten eggs

a. Mix all, and beat for 15 minutes.
b. Bake in layers.

Cake Filing Ingredients
250 ml milk
1 teaspoon corn starch
3 beaten egg yolks
3 beaten egg whites
2 teaspoon vanilla extract
1 tablespoon butter
110g sugar

a. Mix corn starch smooth in milk,
on mild fire.

b. Add yolks and extract into milk.

c. When warm, stir in butter,
and sugar. Off the fire.

d. Stir in whites, when cool.

e. Last, cream the filings,
between the cake layers.
