Corn Casserole Recipe (4 Servings)
1 chicken (1500g)
1/4 teaspoon salt
2 tablespoons butter
2 cups whole kernel corn
60 ml milk
1/2 cup dried bread crumbs (fine)
2 eggs (slightly beaten)
a. Wash and dry the chicken.
b. Cut into pieces.
c. Sprinkle with salt and pepper.
d. Melt butter in large skillet over medium heat.
e. Add chicken and brown well on all sides.
f. Drain chicken, measure liquid.
g. Add enough milk to make 375 ml.
h. Combine corn, crumbs, eggs and salt.
i. Stir in milk mixture, spread evenly,
in greased shallow casserole.
j. Arrange chicken on top and scrape drippings,
from skillet over all.
k. Cool and store in refrigerator, if you want to use it later.
l. Bake uncovered in 175-180°C (347-356°F) oven,
for 55 to 60 minutes, until the chicken is tender.
