How to Cook Corn

a. Put a teaspoonful of vinegar,
into the water.
b. When it boils, put corn,
into the water and boil three minutes.


Cornmeal Muffins

120g flour
60g cornmeal
50g sugar
250 ml milk
1 egg (well beaten)
1 tablespoon butter (melted)
2 teaspoons baking powder
1/2 teaspoon salt

a. Mix all dry ingredients together.

b. Add milk, egg and butter.

c. Put in a greased muffin tins,
and bake in pre-heated 200°C,
or 392°F oven for about 20 minutes.

More Muffins

Corn Fritters

1 egg (beaten light)
200g corn
2 tablespoons flour
1/4 teaspoon baking powder
Salt and pepper to taste

a. Add corn to egg.

b. Sift together flour,
and baking powder,
and add in corn mixture.

c. Fry in deep oil.

d. When done, sprinkle with salt,
and pepper to taste.


Corn Soup

1 canned corn
1 teaspoon cornstarch
(mix with little cold milk)
2000 ml milk
1 teaspoon butter
Salt and pepper to taste

a. Put corn through grinder,
then through coarse sieve.

b. Add milk, constarch mixture, salt,
pepper, and butter.

c. Boil until creamy.


Corn Recipes

Corn Starch Pudding One

500 ml water
2 tablespoons cornstarch
1 lemon (juiced)
1 teaspoon butter
2 bananas
1 orange
100g nuts
3 tablespoons sugar
Whipped cream

a. Smooth cornstarch in a little,
of the water.

b. Add sugar to the reminding of water,
and bring to boil.

c. When it boils, pour in cornstarch,
and lemon and cook until clear.

d. Put 1/3 sliced fruit and nuts in mould.

e. Pour over 1/3 cornstarch, then fruit,
and so on till finished.

f. When cold turn out and serve,
with whipped cream.


Corn Starch Pudding Two

500 ml milk
4 egg yolks
4 egg whites
4 tablespoons corn starch
(mix with a little cold milk)
4 teaspoonful powdered sugar
Vanilla or lemon flavour

a. Boil the milk, then beat the egg yolk,
with corn starch mixture.

b. Stir this into the boiling milk,
and let it boil up once.

c. Turn into a pudding dish.

d. Beat egg whites to a broth,
and add powdered sugar.

e. Cover the pudding with this mixture,
and set in a 140°C or 284°F oven.

f. Brown lightly for about 30 minutes,
and flavour with vanilla.


Corn Recipes

Cornmeal Pancakes

2 tablespoons cornmeal
2 tablespoons butter milk or sour milk
1 egg yolk
1 egg white (beaten)
125 ml hot water
1 tablespoon white flour
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon soda

a. Scald cornmeal, add egg yolk,
and butter milk with soda,
white flour, salt and sugar.

b. Mix well and add egg white.

c. Fry in a greased hot pan.

Note: When too dry, add more butter milk,
and grease.
