Stuffed Eggplant

Eggplant Recipe

Stuffed Eggplant

1 medium sized eggplant
3 raw tomatoes pulp (chopped fine)
1 tablespoon bread crumbs
1 tablespoon butter
250 ml stock
Salt and pepper

a. Boil the eggplant for 20 minutes.

b. Put it in the cold water,
for 30 minutes.

c. Cut it in half length-wise and scoop out,
the inside, leaving them by the shell,
at least 2 cm thick.

d. Make ready a forcemeat of the pulp,
of egg plant and the pulp of tomatoes.

e. Mix this with the bread crumbs,
butter, salt and pepper.

f. Fill the 2 halves of the eggplant,
with this mixture.

g. Lay them in a pan and pour,
around them the stock.

h. Cover and bake in 180°C oven,
or 356°F for about 1 hour. Baste often.

i. Uncover, strew the surface of the shell's contents,
with crumbs.

j. Put bits of butter on this and brown.

a. You may replace butter with beaten egg and gravy.
b. You may replace meat mixed with dried shrimps,
with tomatoes when desired.


Eggplant Recipe

Baked Eggplant

1 medium sized eggplant
1 beaten egg
450g tomatoes (cut fine)
1 small onion (cut fine)
1 green pepper (cut fine)
1 level teaspoon salt
1 tablespoon flour
Cracker crumbs

a. Peel eegplant, cut in slices 1 cm thick,
and let stand 1.5 hours in slightly salted water.

b. Drain, roll in beaten egg and cracker crumbs.

c. Fry slowly about 10 minutes until soft.

d. Prepare a tomato sauce of tomatoes,
onion, green pepper, salt, flour smoothed,
with a little water.

e. Cook slowly for 30 minutes.

f. Place a slice of breaded eggplant,
in a baking dish, then a layer of tomatoe sauce,
and then small cut pieces of cheese. Repeat.

g. Put a little water in pan,
to keep from burning.

h. Bake slowly in 180° C or 356°F oven,
for about 45 minutes.


Eggplant Recipe

Fried Eggplant

Bread crumbs

a. Peel eggplant and slice in 1.5 cm slices.

b. Stand in slightly salted water,
for 2 hours.

c. Drain and dry.

d. Dip in bread crumbs and fry,
until soft in 1.5 cm flat.


New Fried Eggplant

1 eggplant
1 egg (seasoned with salt and pepper)

a. Pare and slice the eggplant as desired.

b. Dip at once into egg, then into cornstarch,
till every part is well covered.

c. Fry in deep hot oil to a rich brown.

d. Lay on brown pepper until served,
to absorb any extra grease.
