Easy Tea Cake

500g brown sugar
500g flour (sifted)
250g butter
2 eggs (well beaten)
1 teaspoon cinnamon

a. Cream the butter and sugar together.
b. Add eggs, cinnamon and mix well with flour.
c. On slightly floured table, roll out very thin,
and bake in a 200°C or 392°F oven,
for 10-15 minutes.

Butter Cake

200g sifted all purpose flour
170g caster sugar
1 teaspoon baking powder
1 teaspoon lemon juice
1 teaspoon vanilla extract
3 eggs
1/4 teaspoon salt
150g unsalted butter

a. Cream sugar and butter together.
b. Beat the eggs one at the time,
and mix well to a creamy paste.
c. Mix in lemon juice and extract.
d. Sift flour, salt and last the baking powder,
into the batter.
e. Mix well and spoon to the greased baking pan.
f. Bake in a preheated 180°C or 356°F oven,
for 45-50 minutes.

a. When you add 1 teaspoon of cocoa powder,
will become acocoa cake.

b. When you add nuts like pine nuts, almonds,
or pecans,will also enhance the flavour.

Cinnamon Stars

2 tablespoons butter
200g sugar
2 eggs
180g pastry flour
1 teaspoon cinnamon
1/4 teaspoon baking powder

a. Cream butter, sugar and eggs until light.
b. Sift all dry ingredients together,
stir in egg mixture.
c. On a floured board, roll out quite thin,
and cut with a star cutter.
d. Bake on floured baking dish,
in a preheated 180°C,
or 356°F oven for 15 to 20 minutes.

Chocolate Gingerbread

100g molasses
1 tablespoon butter (melted)
1 tablespoon cooking oil
100g brown sugar
1/4 teaspoon ginger
1/4 teaspoon cinnamon
1 teaspoon soda
(mix with 200 ml sour milk)
1 tablespoon sweet chocolate (melted)

a. Blend all the ingredients together thoroughly.
b. Stir in soda mixture and flour to stiffen.
c. Bake in a preheated 180°C or 356°F oven,
for 20 minutes.

Cheese Tart (8 servings)

250g sweet digestive biscuits
125g butter (melted)
250g cream cheese
400 ml sweet milk
1 teaspoons orange rinds
80 ml orange juice
1 teaspoon agar agar powder
1 tablespoon water

a. Mash the cookies to fine crumbs,
and mix with the butter.
b. Spread and press this over the bottom,
of the baking dish.
c. Cover it and set in the refrigerator,
for 30 minutes.
d. Meantime, beat the cheese to a smooth paste.
e. Stir in the orange juice, orange rinds,
and milk.
f. Mix well to a smooth batter.
g. In a bowl, combine agar agar powder and water,
and set the bowl in a pot of boiling water.
h. Stir till the agar agar is dissolved.
i. When it is cool, mix it into the cheese mixture.
j. Pour this mixture over the crust,
and set the tart in the refrigerator,
over night.
k. Serve with whipped cream.

a. You may replace agar agar powder,
with gelatine when desired.
b. You may replace digestive cookies,
with other sweet cookies.
c. You may replace orange with lemon.
d. You may sprinkle chocolate flakes,
on top before serving.
e. You may garnish with cherries or jam.
f. You may serve without whipped cream,
when desired.
g. You may top with ice cream.
