Chinese Garlic Chicken
2 cloves garlic
2 cloves shallots
2 tablespoon dark soy sauce
2 tablespoon Chinese wine
2 tablespoons garlic and chilli paste
1 teaspoon light soy sauce
1 tablespoon oyster sauce
250 ml water
a. Clean the chickens.
b. Rinse in the hot water and drain dry.
c. Rub both inside and outsides,
of the chicken with wine and dark soy sauce.
d. Air dry a while and deep fry the chickens,
until golden yellow.
e. Deep fry the shallots and garlic cloves,
over high heat until fragrant.
f. Sprinkle with wine and add seasonings.
g. Bring it to boiling point.
h. Place in the chickens and stew,
for 15-20 minutes.
i. Turn the chickens every 5 minutes.
j. Serve whole or chop in pieces.
