Ice Cream With Fruit Syrup

Peppermint Ice Cream

500 ml milk
500g cream
250g striped peppermint candy

a. Crush candy and dissolve,
in the milk.

b. When this mixture is half frozen,
add the cream, and beat till stiff,
and finish freezing.


Pineapple Ice Cream

1 canned pineapple (grated)
200g sugar
500 ml water
500g whipped cream

a. Make a syrup by boiling sugar,
and water for 10 minutes.

b. Cool and add pineapple.
Freeze to a mush.

c. Fold in whipped cream,
let stand 30 minutes before serving.

d. Serve in pretty glass and garnish,
with candied pineapple.

Orange Ice Cream

400g sugar
250 ml water
500 ml orange juice
250 ml milk (scalded)
2 egg yolks (well beaten)
500g cream

a. Boil the sugar and water together,
to a thick syrup.

b. Remove from the fire, add the orange juice,
put aside and let cool.
c. Meanwhile pour the milk over the egg yolks.
Stirring constantly.

d. On the fire, cook this egg mixture,
for about 3 minutes, until slightly thickened,
as for custard.

e. Cool, stir in the cream, mix,
with the orange syrup and freeze,
in a freezer.

Note: You may used half cream ,
and half evaporated milk instead,
of only 500g cream.

Orange Ice Cream Special

750g milk
500g cane sugar
2 oranges rind
8 egg yolks
6 large oranges (juiced)
1/4 teaspoon salt

a. Mix the ingredients in an inner vessel.

b. Stir well until the mixture thickens.

c. Pass through fine sieve, and freeze.

Peach Ice Cream

500g cream
250 ml sweeten milk
3 eggs whites (beaten)
500g peaches (slices)

a. Place the cream in the freeze.

b. Run the peaches through a sieve.

c. As soon as the cream begins,
to freeze well,
add the peaches.

d. Freeze 7 minutes and add the whites.

e. Freeze well.

Cinnamon Ice Cream

750g rich cream
500g sugar
8 egg yolks
1 stick of cinnamon

a. Cook all ingredients in a inner vessel,
until mixture thickens.

b. Strain, cool and freeze.


Banana Ice Cream

8 bananas
2000g cream
250g sugar
1 lemon (juiced)
1 tablespoon agar-agar,
or gelatine

a. Make a syrup of the sugar,
and add the lemon juice.

b. When the syrup is cool, pour,
into the cream and put in the freezer.

c. Mash the fruit and add when the cream,
is half frozen.

Vanilla Ice Cream

750g cream
500g sugar
1 vanilla bean
7 egg yolks
1/4 teaspoon salt

a. In a inner vessel, break up the bean,
in the mixrue.

b. Cook until mixture thickens.

c. Strain, cool and freeze.


Vanilla sauce could be used for any kind,
of plain ice cream, put on waffles,
salads, and many more.

Vanilla Sauce

1 egg
250 ml milk
1 tablespoonful sugar
7 drops vanilla extracts

a. Break the egg into a bowl.

b. Beat it hard with the mixer,
or egg-beater.

c. Stir in milk, and sugar.

d. Put it into sauce-pan and cook,
over a low fire. Stirring all the time,
in the same direction.

e. Take it off when it begins to thicken,
and before it comes to a boil.

f. Add vanilla drops and stir well.

Chocolate Ice Cream

2 squares chocolate
250 ml hot water
200g sugar
1/8 teaspoon salt
1000g cream
1 teaspoon vanilla

a. Melt chocolate, add hot water,
and heat for 5 minutes.

b. Add sugar, salt and cool.

c. Add cream and vanilla and freeze.


This syrup is for vanilla ice cream.

Chocolate Syrup

28g chocolate
4 tablespoon sugar
250 ml boiling water
1 cinnamon stick (5 cm)
350g sugar
1 teaspoon vanilla

a. Melt chocolate over hot water.

b. Add 4 tablespoons sugar,
and the boiling water gradually.
Stirring constantly.

c. When smooth and glossy, add the rest,
of the sugar and cinnamon.

d. Stir until boiling begins,
let boil 5 minutes.

e. Strain, cool and add the vanilla.
