Lemons For Lemon Pie Recipes

Lemon Pie Recipes

Pie Filling

Ingredients A
1 lemon
1/2 orange
200g sugar
3 egg yolks
250 ml water
1 level tablespoon flour
30g butter
1 baked pie crust

Ingredients B
1 spoonful sugar
3 egg whites

a. Beat all A ingredients together,
and cook till a thick custard.

b. Beat the whites with sugar,
until stiffed.

c. Put the custard into the crust,
and add the stiffed whites.


Lemon Pie Filing

1 tablespoon cornstarch
250 ml water
1 teaspoon butter
1 large lemon (juiced and grated rind)
100g sugar


a. Mix cornstarch with a little water,
to a smooth paste.

b. Put this in a saucepan, add water,
and boil 5 minutes.

c. Add butter, juice and rind,
and sugar. It should have the consistency,
of thick cream.

d. Bake between an upper and lower crust.


Lemon Pie

500 ml boiling water
2 tablespoons cornstarch
2 lemon (juice and rind)
1 teaspoon butter
2 egg yolks
2 egg whites
(beat with pullverised sugar)

a. Dissolve the corn starch,
in the boiling water.

b. When done, remove from heat,
and add the lemon juice and rinds.

c. Stir in butter and egg yolks.

d. Put the beaten egg whites on top,
of the pie and put into the oven,
and bake to brown.


Apricot Jam

4000g apricots
800 ml sweet orange juice
3500g sugar
1000g almonds

a. Whip and stone the apricots and cut up,
to suit taste.

b. Blanch the kernels and bruise them fine.

c. Boil sugar, orange juice and almonds,
for 15 minutes.

d. Add fruit and boil 30 minutes.


Apricot Jam for Apple Pie

250g fresh apricots
120g sugar

a. Mix all together.

b. Cook until thick and let cool.


Apricot Dessert


a. Wash the fruit carefully and allow it,
to soak in cold water over night.

b. Boil slowly for 10 minutes,
in same wter.

c. Add sugar to taste and place,
in slow cooker for 4 hours.
