I have booked a table this morning, in a special restaurant.

I want to see what special lunch recipes they have. You came
just in time!

Today, this restaurant is offering something special. We are
allow to choose all types of breads including corn bread,
shortbread, sweet bread, and many others.

Shall we first take a look at the menu?

You want Shortbread One?

1000g flour
450g butter
250g fruit or brown sugar

a. Sift flour and sugar.

b. Rub in butter until smooth.

c. Roll out 2 cm thick and cut,
in squares or with fancy cutter.

d. Bake in 180°C or 356°F oven,
for about 30-40 minutes.


Or this Shortbread Two?

625g flour
250g sugar
250g butter
3 eggs
1/4 teaspoon lemon essence
1/2 tablespoons salt
1 piece candied lemon peel

a. Mix all in a bowl, and make 4 portions out,
of 120g dough.

b. Mold them into 4 round forms, then roll them out,
into 4 oval shapes.

c. Pinch them around the edges.

d. Put the lemon peel at the top, and bake 1 hour,
in 150°C or 302°F oven.

Sweet Bread Special

Slices of boiled ham
Lemon juice
Cream and milk

a. Prepare slices of ham as needed,
for each guest.

b. Simmer in butter. Parboil sweetbread,
and brown in butter.

c. Slice the bread nearly through,
and put a slice of ham in each.

d. Fry mushrooms in butter in a saucepan,
about 10 minutes with lemon juice squeezed over them.

e. Add flour to butter and some cream,
and milk.

f. Place them in a casserole and top,
with mushrooms.

g. Put in oven and heat thoroughly.

Corn Bread

120g corn meal
120g plain flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon baking powder
250 ml sour milk
1 egg (beaten)

a. Sift all the dry ingredients together,
in a bowl.

b. Beat thoroughly, add egg,
and milk.

c. Put mixture in a buttered,
and floured pan.

d. Preheat oven to 180°C or 356°F.

e. Bake for about 30 minutes.


Besides corn bread, they have also nut bread.

Nut Loaf

500 ml sour milk
110g sugar
170g molasses
2 teaspoons oil
480g graham flour
160g walnuts (chopped)

a. Mix all together in a bowl.

b. Place in a buttered bread pan.

c. Bake in 150°C or 302°F oven,
for about 40 minutes.

Note: This makes one large and one small loaf.

Wonderful Fruit Rolls

250g flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons butter
1 egg
125 ml milk
1 teaspoon cinnamon powder
80g raisins
80g walnuts (chopped)
Little orange or lemon rinds
(fine chopped)
Melted butter

a. Sift together flour, baking powder, salt,
and sugar in a mixing bowl.

b. Add butter, mix together thoroughly.

c. Mix the egg to the milk and add,
into the dough mixture.

d. Knead lightly till a smooth dough is formed.

e. Roll out about 1 cm thick, spread butter,
carefully over the dough.

f. Sprinkle sugar and dusting of cinnamon,
over this.

g. Sprinkle raisins, orange rinds,
and walnuts over the sugar.

h. Roll from you into compact roll and cut,
into slices 1.5 cm thick.

i. Place close together in bread pan,
brush over with melted butter.

j. Bake in preheated 180°C or 356°F oven,
for about 15 minutes.

Besides shortbread, corn bread, and sweet bread,
they have also brown Bread for lunch recipes.

Ingredients (12 servings)
120g whole wheat flour
120g corn meal
120g rye meal
1 teaspoon salt
250g molasses
1 tablespoon baking powder
330 ml milk

a. Mix all the dry ingredients thoroughly.

b. Add molasses to milk and then mix,
into the dry ingredients.

c. Beat thoroughly, put into greased moulds.

d. Filling them 2/3 full. Steam 3.5 hours.

e. Remove covers and bake until top is dry.

Coffee Ring

360g flour
1 teaspoon salt
35g sugar
180 ml milk
1 tablespoon butter (melted)
1 tablespoon baking powder
170g raisins (washed, drained,
and floured)
1 egg (beaten)
100g nuts (chopped)

a. Sift dry ingredients together,
add raisins.

b. Mix milk, butter and egg thoroughly,
and add to the dry ingredients.

c. Make a soft dough, roll out lightly,
about 2 cm thick.

d. Divide into 2 long strips and twist together,
to form a ring.

e. Put it into a greased pan, sprinkle,
with sugar and nuts.

f. Allow to stand 20 minutes.

g. Bake in 180°C or 356°F oven,
for 20-25 minutes.

Note: Add more milk, if necessary.

Sardine Salad

One head of lettuce
One bunch of cress
A little parsley
2 apples
1 beet
2 sardines
mayonnaise dressing

a. Wash, pick over and drain the lettuce,
cress and parsley.

b. Place them in a salad dish,
making a hollow in the center.

c. Pour the mayonnaise dressing,
over the salad.

d. Cut the apples in thin slices.

e. Lay them around the salad, and garnish,
with beet.

f. Bone 2 sardines and cut them length-wise.

g. Take each half and roll up in a leaf,
of lettuce, and stand them in the center of
the salad.

This lunch is very worth!

Prune Whip

250g prunes
50g sugar
2 egg whites
1/2 tablespoon lemon juice

a. Wash and soak the prunes over night.

b. Cook them in the same water,
till quite soft.

c. Remove the stones and press them,
through a potato masher.

d. Add sugar and cook 5 minutes.

e. Beat the egg whites to a very stiff froth.

f. Add this together with lemon juice,
to the prunes pulp.

g. Stirring lightly with a fork.
h. Put all in a buttered shallow baking dish,
and bake about 20 minutes in a 150°C or 302°F oven.

i. Serve with cream or custard.

We had a very wonderful lunch.
