Amazing Potato Recipes,
Potato Salad, Potato Soup,
and Eggplant Recipes!

I came across not many Potato Recipes during my younger days.
We prefered rice or noodles. Of course, we had also chips,
or Potato Soup, sometimes with meat and onions.

Eggplant recipes are not new to me. My mum cooked them,
very often. I love the sambal chilli eggplants, and stuffed eggplants.

I learned to eat Potato Salad just not long ago. It was easy,
and wonderful.

Show you my very best Potato recipes.

Potato Wonder

4 large potatoes

a. Boil the potatoes in their skin,
and let them cool.

b. When cool, peel them and cut them,
into thick slices.

60g butter
1 teaspoon gravy (seasoned)
1 teaspoon parsley (fine chopped)
1 teaspoon pepper
1 teaspoon salt

a. Melt the butter in a stew-pan,
and add the gravy.

b. Then stir in the rest, until hot.

1 teaspoon lemon juice

a. Add the potatoes into the mixture,
and simmer for 5 minutes.

b. Stir in the juice, and serve hot.

Potato Magic

Some potatoes
Fine salt
Fine cayenne powder

a. Cut the potatoes into slices,
about 1 cm thick.

b. Remove the skins, and pare round,
and round in very long,
and thin strips.

c. Place them in a pan of cold water,
for 5-10 minutes.

d. Drain them and fry them in hot oil,
till crispy.

e. Drain and dry them on a soft kitchen paper.

f. Pile them on a hot dish, and season them,
with salt and cayenne.

Stuffed potatoes

4 large uniform sized potatoes
1 tablespoons butter
1 tablespoons chives (fine chopped)
1 tablespoons onions (fine chopped)
Salt and pepper to taste
Hot milk
1 egg (slightly beaten)

a. Scrub the potatoes with a vegetable brush.

b. Bake them in the 210°C or 410°F oven,
for about 40-45 minutes.

c. Remove a thin slice of the side length-wise,
of the potaoes.

d. Scoop out the pulp, pass through the ricer.

e. Add butter and milk, then the chives,
and onions.
f. Season with salt and pepper.

g. Beat thoroughly and return to the shells,
using pastry bag and tube.

h. Brush over egg, and return to oven,
to brown delicately.

Potato Flour Muffins one

4 egg whites (beaten stiff)
4 egg yolks
1/4 teaspoon salt
60g potato flour (sifted twice)
1 teaspoon baking powder (sifted twice)
1 teaspoon butter (melted)

a. In a mixing bowl, mix salt to yolks,
and fold in the whites.

b. Blend in the dry ingredients lightly,
and add the melted butter.

c. Mix batter thoroughly, stirring no more than necessary.

d. Pour into the muffin pans, which has filled,
with 12 small
paper muffin cups.

e. Bake for 15-20 minutes in the 180°C,
or 356°F oven.


Potato Flour Muffins Two

4 egg whites (beaten stiff)
4 egg yolks(beaten well)
1/2 teaspoon salt
1 tablespoon sugar
60g potato flour (sifted)
1/2 teaspoon baking powder
2 tablespoons ice water

a. Fold salt and sugar into whites.

b. Add yolks, flour, baking powder,
salt, sugar, and last the ice water.

c. Pour into a well greased muffin tins,
and bake in 180°C oven for 20-25 minutes.

Cucumber Salad Stuffed Potatoes from Potato recipes

Potato Salad Sauce One

Olive oil
White sesame seeds
Cashew nuts
Lemon juice

a. Boil the potato till soft,
remove the skin and mesh it to a paste.

b. Add the rest and beat them,
in the juicer till paste form.


Potato Salad Sauce Two

500g boiled hot potatoes (cubes)
1/2 chopped celery
1 tablespoon chopped parsley
1 tablespoon chopped lettuce
Few whole leaf of lettuce
1 tablespoon Mayonnaise dressing

a. Stir lightly together the potatoes,
celery, parsley, and 1/3 of the mayonnaise.

b. Keep them on the ice, until serving.

c. Place one large teaspoon of potatoes on a leaf,
of lettuce and serve in the leaf, with a tablespoon,
of dressing on top.

Note: If a slight flavour of onion or garlic is desired,
rub a slice of onion or a little garlic around the salad bowl.


A very special dish from potato recipes!

Potato Puff Balls

Hot baked potatoes
2 tablespoons butter
Rich cream
Nut meats (fine chopped and seasoned)
1 egg yolk (slightly beaten)
1 egg white (stiff beaten)
1/2 teaspoon parsley (fine chopped)

a. Scoop out the inside of hot baked potatoes.

b. Force the pulp through a ricer.

c. Add butter, rich cream, salt and paprika.

d. While beating constantly, add egg yolk,
and parsley.

e. Cook for 1 minute, stirring constantly.

f. Remove from fire, and fold in the egg whites.

g. Shape in balls and roll in the nut meats.

h. Place them on buttered pan, and brown in the oven.



I had this potato soup very often,
during my childhood time.
I could never forget!

Potato Soup

5 medium sized potatoes
1 small onion (sliced)
1000 ml milk
3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon celery salt
Some parsley (chopped)

a. Peel and slice the potatoes.

b. Cook them in boiling salted water,
till soft.

c. Put them through the strainer.

d. Scald the milk with onion slices.

e. Remove the onion, and add milk slowly,
to the potatoes.

f. Melt butter, and stir in flour,
salt, and pepper. Mix well.

g. Add to the boiling soup and cook,
for 1 minute.

h. Strain, sprinkle with parsley,
and serve.

Eggplant Chilli-eggplant dish

Besides showing you the potato recipes,
this are also my favourite, eggplant recipes.

Fried Eggplants

Olive oil
Lemon juice
Light soy sauce

a. Wash the eggplant and soak,
in the cold water for 15 minutes.

b. Cut them into 1 cm slices and sprinkle,
with lemon juice.

c. Heat the frying pan very hot,
then add oil.

d. Place the eggplants a few at a time,
into the oil and fry them till both sides brown,
and soft.

e. Put them in a pretty plate,
and sprinkle with sugar.

f. Add a little soy sauce to taste,
and serve hot with rice.


Chilli Eggplants

Olive oil
Lemon juice
Sugar (optional)
Chilli paste

a. Wash the eggplant and soak,
in the cold water for 15 minutes.

b. Cut them into 1 cm slices, and sprinkle,
with lemon juice.

c. Heat the frying pan very hot,
then add oil.

d. Place the eggplants a few at a time into the oil,
and fry them till both sides brown, and soft.

e. Fry the chilli paste in a separate pan,
till fragrant.

f. Stir fry the eggplants with the chilli,
till mixed.

g. Place them in a pretty plate,
and serve hot with rice.

Note: You have to add sugar, when the chilli paste,
is too salty.
