Deep Fried Prawns

Ingredients A
500g large prawns
Hot water
a. Wash the prawns, remove the legs.

b. Cut each prawn into 2 sections.

c. Blanch in a bowl of hot water,
with a little cooking wine and salt.

d. Take it out and fry until the prawns,
turn golden brown.

Ingredients B
3 tablespoons garlic paste
3 tablespoons chilli paste
1/4 teaspoon salt
1 teaspoon sugar
2 tablespoons water
2 teaspoons chopped spring onion
1 teaspoon fruit vinegar
Few drops of light soy sauce
Combine all together well.

Ingredients C
1 tablespoon corn flour
1 tablespoon water
Dissolve the corn flour in the water.

Ingredients D
1 tablespoon ginger (diced)
1 tablespoon spring onion (diced)
2 teaspoon spring onion (chopped
1 tablespoon celery (chopped)
2 teaspoons cooking wine

a. Fry ginger, spring onion, and celery,
until fragrant.

b. Add the prawns, cooking wine,
and A mixture.

c. Cook until boiled.

d. Add C mixture to thicken the sauce.

e. Lastly add chopped spring onion,
vinegar, and soy sauce.


My mum often made this dish on the Chinese New Year Eve,
reunion dinner.

We have another type of fried Prawns. Just fry the prawns,
with little oil till cooked. Then garnish with a sweet,
and sour sauce. It is also very delicious!
