Veal Soup

1500g joint of veal
(well broken up)
4000 ml water
125g macaroni
Salt and pepper
500 ml milk
Celery flavour

a. Put water with veal in a pot,
and set it over to boil.

b. Boil macaroni with sufficient water,
to cover it.

c. Strain the soup and season,
to taste with salt and pepper.

d. Add macaroni in the water in which it is boiled.

Note: The addition of rich milk or cream,
and celery flavour is relished by many.


Veal Chops

4 veal chops
Salt and pepper
3 tablespoons butter
1 onion (cut in 4)
1/2 tablespoon flour
250 ml stock or broth
1 stalk celery
Chopped pasley

a. Season veal chops with salt and pepper,
and place in a sauté pan with 2 tablespoons butter,
and onion.

b. Sauté until the onion and chops are golden yellow,
then place the chops on a platter.

c. In the saute pan put flour and simmer.

d. Add broth and boil for a few minutes.

e. Cut celery in small squares,
and par-boiled in slightly salted water,
for 10 minutes.

f. Drain off the water and add the celery,
to the sauce from the chops and boil,
for 10 minutes.

g. Add the chops and simmer,
for 10 minutes.

h. Remove the chops to the platter,
and season the sauce well with salt and pepper.

i. Add 1 tablespoon butter and some chopped pasley,
and pour over the chops.
