Fruit Salad is very wonderful, easy to prepare.
It is important for many occasions.

Shrimp salad, crab salad, and Lobster Salads,
are our popular seafood salads.

Salad dressing recipes are very important.
They added extra taste to the salads.

Cold Slaw


a. Lay the cabbage in halves,
into cold water for 1 hour.

b. Shave down the head into small slips,
with a sharp knife.

c. Mix with cold slaw dressing.


Try some salad dressing recipes,

Cold Slaw Dressing One

2 egg yolks
little sweet olive oil
pinch of salt
2 teaspoon mustard powder
a bit of pepper

a. Add mixture in the cabbage,
and mix thoroughly.

b. Stir in 250 ml of vinegar gradually.

c. Turn over it, as it goes to the table.


Cold Slaw Dressing Two

2 egg yolks (well beaten)
300g cream
250 ml vinegar
salt and pepper to taste

a. Boil vinegar in pan, add cream,
and egg yolks and let it boil up.

b. Sprinkle salt and pepper on the cabbage,
then pour the mixer over.

Salad Recipes

Cold Salad

250g White cabbage
1 Tomato in slices
(remove seeds)
1 Yellow pepper (cut in rings)
2 Boiled eggs (slices)
1/2 Winter carrot
(cut in long strips)
1 bush fresh coriander
(fine chopped)
3 tablespoonful sweet soy sauce
1 tablespoonful sambal chilli
1 tablespoonful lemon juice
2 tablespoonful cheese
Fresh grounded white pepper
1/4 teaspoon salt
50 ml water

a. Cook a pot of water.

b. Add carrot and cabbage, and cook,
for 2 minutes.

c. Drain it dry immediately, after it rinsed,
with cold water.

d. Put them in a plate with the tomato,
and the pepper rings.

e. Spread the egg slices, and coriander,
over the salad.

f. Heat up the cheese with black soy sauce,
sambal chilli, and lemon juice,
on low fire.

g. Thin the sauce with water. Add salt,
and pepper to taste.

h. Pour the sauce over the salad,
and serve with crispy crackers.


Special salad recipes

Yellow Courgette Salad
(Yellow Squash)

Ingredient A
5 tablespoonful of olive oil
3 large red onion (cut in rings)
4 cloves garlic (fine chopped)
1 red chilli (cut in rings,
and without seeds)
2 teaspoon fresh thyme
4 tablespoon lemon juice
1 teaspoon grated lemon rind
600g Cooked chick peas
1 Handful parsley leaves
250g feta cheese (cubes)

a. Heat 1 tablespoon oil in a saucepan.

b. Fry the onion rings about 5 minutes.

c. Add the garlic, chilli, thyme and fry till,
the onion aroma released.

d. Add the lemon juice, rinds, and chick peas.
Stir fry constantly for 4 minutes.

e. Pour them in a bowl, and mix.

f. Add parsley and cheese cubes through,
when it is cool.

Ingredient B
4 fresh yellow or green courgettes
2 handful watercress

a. Remove the skin thinly from the courgettes.

b. Remove the seeds, cut into 20 strips.

c. Cook the strips in a pan of salted water,
stir carefully.

d. Remove the strips from the pan,
and rinse them under the cold tape water.

e. Drain them, lay them along the sides,
of the plate.

f. Decorate the watercress in centre of the dish.

g. Spread the chick peas in between,
of the watercress.

h. Serve the dressing separately.


Salad Recipes

Turnip and Beets

250g tunips
200g green peas
250g beets
a. Cook both vegetables separately,
till ender.

b. Dice and set on ice,
until ready to serve.

c. Place a spoonful of the mixed vegetables,
on a leaf of lettuce, border with green peas,
and put a spoonful of mayonnaise.

Dressing Ingredients
2 handful basil leaves
1/2 teaspoon of sugar
3 tablespoonful of Cream Fraiche
1 tablespoonful cold water
pepper and salt

a. Mix basil leaves and sugar,
through the food mixer to a paste.

b. Add cream Fraiche and cold water,
and mix through.

c. Add pepper and salt to taste.

Cucumber Salad A

1 cucumber
1/2 teaspoon salt
1/2 teaspoon garlic (minced)
1/4 teaspoon ginger (minced)

Sauce Ingredients
1/2 tablespoon miso
1/2 teaspoon light soy sauce
1/2 teaspoon sugar
1/2 teaspoon olive oil
1/2 teaspoon salt

a. Wash the cucumber, cut into short strips.

b. Season with salt for 5 minutes.

c. Rinse them in cold water,
and drain them dry.

d. Mix the sauce, add in garlic,
and ginger.

e. Mix the cucumbers evenly,
in the sauce mixture,
and serve.


Cucumber Salad B

1 cucumber

a. Pare and slice the cucumber very thin.

b. Throw them into cold water,
for one hour. Drain and dry.

c. When ready to serve, put them,
into a pretty salad bowl and pour,
over them a cream dressing.


Cucumber Sauce A

1 bottle cream
1/4 teaspoon salt
1/4 teaspoon paprika powder
2 tablespoon vinegar
1/2 cucumber (diced)

a. Whip the cream, add salt,
and paprika.

b. Gradually stir in vinegar,
and cucumbers.

c. Drain it.


Cucumber Sauce B

2 cucumbers
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon vinegar

a. Grate the cucumbers,
and drain the water away.

b. Add salt, cayenne, vinegar,
and serve.


Cream Salad Dressing

120 ml lemon juice
1 tablespoon sugar
120 ml rich milk or cream
1 tablespoon olive oil
1 teaspoon salt
2 eggs (beaten)

a. Put lemon juice into a non-metal dish,
on the stove.

b. Add olive oil, sugar and salt.
Set aside

c. Put the milk on the stove,
in another saucepan and when hot add the eggs.

d. Let cook smooth, but do not allow it,
to boil.

e. Remove from the stove to cool partially.

f. When it is ready, beat the two sauces together

Note: This is a very nice dressing,
for all the vegetable salads.
