Cream Scones

240g flour (sift 3 times)
4 teaspoons baking powder (sift 3 times)
3 teaspoons sugar
4 rounded tablespoons butter
2 egg yolks (beaten)
1.5 egg whites(beaten)
1/2 egg white (unbeaten)
80 ml sweet milk
1/2 teaspoon salt

a. Rub butter with tips of fingers into the flour,
and baking powder mix.

b. Add eggs to the milk, and mix them,
into the flour.

c. Toss on floured board and pat,
to one half inch thickness.

d. Brush over with egg white, and sprinkle,
with sugar.

e. Cut and bake in a 220°C or 428°F oven,
for 15 minutes.

Easy Scones

375g pound flour (sifted)
85g sugar
85g butter
100g currants
1 egg
125 ml milk
2 teaspoons baking powder (sifted)

a. Wash the currants well and drained them.

b. Beat the sugar and butter to a cream.

c. Add egg, milk and currants. Mix well.

d. Add flour and baking powder.

e. Make a soft dough. Roll out,
and cut like tea biscuits.

f. Bake in greased pan in a 200°C,
or 392°F preheated oven for 20 minutes.


Yeast Free Bread Recipes

Curant Loaf

360g plain flour
100g currants
900g butter
1 lemon rind (grated)
100g sugar
2 teaspoons baking powder
1/2 teaspoon salt
Cold milk

a. Mix all dry ingredients.

b. Add butter, currants and lemon rinds.

c. Mix the dough to a very thick drop batter,
with cold milk.

d. Grease the loaf pan, heat the oven,
to 180°C or 356°F.

e. Bake about 1 hour.


Tuna Loaf

2 canned white tuna
200g soft bread crumbs
125 ml evaporated milk
1 egg (slightly beaten)
1 teaspoon salt
1 tablespoon chopped onion
1 tablespoon chopped parsley
1 tablespoon grated lemon rind
1 teaspoon worcestershire sauce
1/8 teaspoon pepper

a. Combine and mix weel.

b. Pess into a buttered loaf pan.

c. Bake in a 180°C or 356°F oven.

d. Remove and serve with Caper Sauce.


Caper Sauce

1 tablespoon butter
2 tablespoons flour
60 ml water
50g capers
Salt and pepper to taste

a. Melt the butter, add flour,
and seasoning.

b. Add water, stirring constantly,
and cook slowly until thick.

c. Add Capers with their liquor.


Yeast Free Bread Recipes

Fruit Loaf

500g dates
250g dried figs
250g citron
250g raisins
500g shelled peanuts
250g shelled walnuts
500g sugar
125 ml vinegar
1 tablespoon butter

a. Put all through a grinder.

b. Boil the sugar, vinegar and butter until quite hard,
but not brittle when dropped in cold water.

c. Beat until partly cold, then add fruit,
and nuts.

d. When it begins to harden, turn on a damp cloth,
and work into a roll.

e. Wrap the cloth about it.

f. When cold, cut into thin slices.
