Eggs for Breakfast Toasts

Scrambled Egg Recipes

Scrambled Eggs (3 servings)

5 eggs
250 ml milk
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon pepper
Some slices of hot toast

a. Break the eggs into a bowl.

b. Add salt and pepper.

c. Beat for a minute with an egg beater,
or mixer.

d. Add milk and beat a little longer.

e. Melt the butter in a hot saucepan.

f. Pour in the egg mixture,
and stir slowly constantly.

g. When most of the mixture is thick,
and lumpy, then the scramble is done.

h. Pour the mixture over the slices,
of bread.

i. Serve right away.


Baked Eggs

1 teaspoon beef fat
1/8 teaspoon salt

a. Heat the beef fat till hot.

b. Break in the eggs as for frying.

c. Salt them and set in 200°C,
or 392°F preheated oven,
for about 5 minutes.

d. When they are done, eat them,
with buttered toast.


Poached Eggs

Boiling water

a. Place boiling water in a shallow pan.

b. Break the eggs separately,
in a saucer.

c. Slip the eggs gently into the boiling water.

d. When all are in the water,
place the pan over the fire until the white,
of each is perfectly set.

e. Remove with a slicer and lay,
on buttered toast or broiled ham.
