Spanish Rice Recipes

Rice One

4 slices bacon
2 large onions (sliced)
1 section garlic
Salt and pepper
200g rice
85g fresh tomatoes,
or 1 canned tomatoes
1 canned tomato paste
Cheese (grated)
Green peppers (sliced)

a. Cut bacon into about 3 cm pieces,
and place in frying pan.

b. When partly cooked, add onions,
green peppers and garlic.

c. When nicely browned, add tomatoes,
tomato paste and seasoning and allow to simmer,
for about 15 minutes.

d. Combine with cooked rice and place,
in baking dish and sprinkle with cheese on top,
and put in 180°C or 356°F oven,
for about 30 minutes.

Rice Two

2 tablespoons rice
1 onion (sliced)
2 tablespoons butter
500g tomatoes
1 green pepper

a. Fry rice and onion with butter several minutes,
in casserole.

b. Add tomatoes and green pepper,
and season.

c. Bake in 180°C or 356°F oven,
for about 30 minutes till the rice is soft.


Spanish Rice Recipes

Rice Three

1/2 cup uncooked rice
125 ml cold water
3/4 cup tomato pulp
1/4 cup rice cream
1 tablespoon onion (diced)
1 tablespoon celery (diced)
1 teaspoon browned flour
1/4 teaspoon sage
Salt to taste
Chopped parsley

a. Brown the rice in a small pan,
on the stove.

b. Wash and put it into the inner part,
of a double boiler.

c. Add the water and salt and set,
on a fire and let it boil rapidly,
until the water is almost evaporated,
and rice looks dry.

d. Set it into the outer part,
of the boiler and let steam.

e. Put the onion and celery with cream,
into a small sauce-pan.

f. Let it reduce down until the fat,
of the cream nearly separates.

g. Add the tomato pulp, sage,
and browned flour,
and bring to boil.

h. Add salt to taste, and pour it,
over the rice and mix well.

i. Let it cook 12 minutes, until it pile nicely,
when dish up.

j. Sprinkle with chopped parsley on top.


Chicken and Rice Recipe

Hot water
Wild rice (cooked)

a. Wash, drain and dry the chicken.

b. Cut chicken into small pieces.

c. Rub salt on each piece,
and then rub lour over each one.

d. Fry until browned well on both sides.

e. Add hot water in bottom and cook slowly,
in a pot until chicken is tender.

f. Remove just before meat begins,
to fall from bones.

g. Add celery and serve hot,
with wild rice.
