Green Squash

Squash Recipes

Squash and Corn
(Spanish Style)

3 small summer squashes
3 ears of corn
1 tablespoonful of butter
1 onion
1 tomato (cut small)
1 green pepper (cut small)
Salt to taste

a. Chop squash and cut corn,
from cobs.

b. Put butter in a saucepan.
Stir fry the onion till very hot.

c. Add the corn, squash, tomato,
pepper, and salt to taste.

d. Cover closely, and stir frequently,
to prevent burnig.


Baked Squash

1 large onion (cut up fine)
1/2 bell pepper (cut up fine)
2 pieces garlic (cut up fine)
Small cup of parsley (cut up fine)
1 tablespoon butter
1 squash (cut in halves)
2 slices soaked bread
Bread crumbs

a. Melt butter and fry the rest,
of the ingredients except squash.

b. Boil squash and scoop,
out the interior when soft.

c. Mix with other ingredients,
in frying pan.

d. Add 2 slices of soaked bread.

e. Mix the whole thoroughly,
and fry a long time.

f. Fill shells of squash,
with the mixture.

g. Put bread crumbs on top of all.

h. Bake in 180°C or 356°F oven,
for 20 minutes.


Squash Recipes

Squash Mash

1 Squash (boiled tender)
2 eggs (beaten)
200g grated cheese
Little garlic (chopped fine)
Little green pepper (chopped fine)
Little parsley (chopped fine)
1 slice of soaked bread
Little sweet marjoram
1 tablespoon olive oil
Salt to taste

a. Stir cheese, garlic, and pepper,
into eggs.

b. Add soaked bread, marjoram,
olive oil, and salt.

c. Add squash and bake in dripping pan,
until brown.


Squash Pie

1 squash
1 tablespoon butter
1 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1 teaspoon mace
50g molasses
3 egg yolks (beaten)
1 whole egg
200g sugar
120g cream
125 ml milk

a. Split a squash.

b. Remove the seeds and lay in a dripping pan,
rind side down, with about 3 cm,
of water in the bottom,
of the pan.

c. Bake till tender.

d. Scoop out and add butter,
salt, ginger, cinnamon, and molasses,
to the hot squash.

e. In anther bowl beat up the yolks,
with the whole egg,
and sugar.

f. Add cream and milk.

g. Add this to the other ingredients,
strain, and fill 2 pie plates lined,
with a rich undercrust.

h Bake in 180°C or 356°F oven,
for about 35 minutes,
until done.


Squash Recipes

Stuffed Squash

1 yellow squash (peeled and cut off top)
1 cup raw chopped beef
1 cup boiled rice
1 large onion
Strips of bacon
Strips of tomatoes

a. Fry onion in butter,
until light yellow.

b. Add beef and rice while hot,
season to taste.

c. Remove the seeds from squash,
and fill with dressing.
d. Cook until tender.

e. Lay bacon and tomatoes,
in pan with squash.
