Deep Fried Ginger Chicken Wings

Chinese Deep Fried Chicken Wings

600g chicken wings
2 cloves of shallots
2 red chilli (shredded)
2 cloves of garlic
2 tablespoons ginger
(fine chopped)
2 green peppers (shredded)
2 tablespoons oil

Ingredients for Seasoning
2 tablespoonful oyster sauce
2 teaspoons ginger (minced)
1 teaspoon wine vinegar
1 teaspoon sugar
1 teaspoon sesame oil

a. Cut the chicken wings into sections,
and marinate with the seasoning,
for 30 minutes.

b. Deep-fry chicken wings on simmer heat,
until golden yellow.

c. Saute garlic, shallots and ginger,
with hot oil until fragrant.

d. Stir in green pepper, red chilli,
and add chicken wings. Mix well.

e. Dish up and serve.


Chinese Stir Fry Chicken

1 whole chicken (1200g)
100g pickled ginger stem
1 green pepper (cut in pieces)
1 red chilli (cut in pieces)
2 stalks of spring onion
1 clove of garlic (minced)
1 teaspoon cooking wine
5 tablespoons frying oil

Marinate Ingredients
1.2 teaspoon salt
1/2 teaspoon sugar
1 teaspoon oyster sauce
1 teaspoon ginger juice
1 teaspoon cooking wine
1/2 teaspoon sesame oil
2 teaspoon corn flour
2 tablespoons oil

Gravy Ingredients
3 tablespoons honey
1/2 teaspoon salt
1 teaspoon dark soy sauce
1 teaspoon oyster sauce
4 tablespoons water
1 teaspoon corn flour

a. Bone chicken and cut into pieces.

b. Add seasoning and marinate,
for 15 minutes.

c. Pre-fry the chicken pieces,
with 4 tablespoons frying oil,
until 80% cooked. Put aside.

d. Heat 1 tablespoon oil, saute the garlic,
green pepper, and red chilli till fragrant.

e. Add in the pre-fried chicken pieces,
and stir-fry for a while.

f. Add wine, ginger stem, and spring onions.

g. Thicken with gravy, mix well, and dish up.

h. Serve hot.
