Fried Pork Chops

6 chops
Salt and pepper
500g sauerkrant
Mashed potatoes

a. Season chops with salt and pepper.

b. Dredged with flour and fried in hot oil.

c. Par-boil sauerkraut.

d. Remove chops from frying pan,
and add in kraut and fry,
till browned.

e. Serve with chops and mashed potatoes.


Roast Pork Loin

2500g loin of pork
1/2 teaspoon ginger powder
60g flour
A bottle of beer
Quince preserves
Spoon breads

a. Insert a meat thermomenter into the middle,
of the meat.

b. Rub meat with a little mixed,
with powdered ginger and flour.

c. Put in a 245°C or 473°F oven for 10 minutes,
and reduce heat to 160°C or 320°F.

d. Pour on a bottle of beer and baste every 20 minutes,
until done.

e. Make abrown gravy with the juices in the pan.

f. Serve with apple sauce that has been sweeten,
with quince preserves, corn pudding or spoon bread,
and broccoli.

Note: When the thermomenter register at 85°C,
or 185°F, then it is done.


Barbecued Roasted Pork

Pork roast
250 ml vinegar
1 teaspoonful red pepper
1 teapoonful black pepper
1 teaspoonful salt

a. Place pork roast in dry roaster.

b. Place in oven for 30 minutes.

c. In a saucepan put vinegar, red pepper,
black pepper and salt, and bring to boil.

d. Baste roast every 15 or 20 minutes,
with the sauce at boiling point.

e. Drining off sauce after each basting,
and returning sauce (kept at boiling point),
to saucepan.

f. Drain off sauce and serve in separate dish.
