Vegetarian recipes are mostly low fat recipes.
They are also simple recipes. Cabbage recipes,
are wonderful recipes.

I remembered those days, every first day of,
the Chinese New Year, my mum cooked,
vegetarian lunch and dinner.

She has plenty of vegetarian recipes in hand.
I believed she had learned them,
during her younger days.

During those days, I helped her to make the bean-curd rolls.
We used bean-curd skin to wrap with strips of mushrooms,
lily flower pedals, red carrots, green bean noodles,
and black fungus.

I remembered the skin was very salty.
I had to clean them carefully many times,
in order to remove the salt. It needed,
lots of patients, and work. It was worth for it,
as it was very delicious.


First, let me show you some simple,
and popular vegetarian recipes.

Chinese Red Dates Tea

10-15 Dried Red Dates (remove seed)
5-10 Dried Longan meat

a. Wash both thoroughly.

b. Add them in 1.5 to 2 cups,
of boiling water and boil for 2 minutes.

c. Cover immediately, and store,
in the thermo vras.

Note: I drink this always during the cold days.
It helps to keep me warm!

Chinese Brown Rice Tea

1/2 cup brown rice
8 cups water

a. Stir fry the rice without oil,
on low fire until fragrant.

b. Boil 4 cups of water.

c. Pour roasted rice into the boiled water,
and turn off fire.

d. Cover it, and let it stand,
for 5 minutes.

e. Drain it, keep the rice,
and liquid seperately.

f. Boil another 4 cups of water.

g. Pour the rice in the boiled water.

h. Cover, and simmer 5 minutes,
on low fire.

i. Strain the rice out.

j. Mix the two rice liquid together.

Note: Please cook this tea only,
in stainless-steel or glass pot.

I drink wheatgrass juice once a while, when I need greens.
You may get the fresh grown wheatgrass,
from the supermarket or plant it yourself.
You can also get the powder from the health shops,
if needed urgently.

The wheatgrass must grind through a special wheatgrass juicer,
in order to get the juice.

I drink this juice on and off.
It helps my indigestion problem.
It is from the Low Fat Recipes.

Wheat Sprouts Juice

50g Wheat Grass seeds
water (purified)

a. Select seeds and place them,
in a clay container of water.

b. Throw away those floated seeds,
when used 2 fingers,
to stir the water.

c. Then rinse them, and add water.
Cover them with a lid and stand in the room temperature,
for 24 hours.

d. The next day, rinse them, cover them,
and let them stand for another 24 hours.

e. After about 2 days, can see the wheat sprouts already.

f. Then rinse them again, add water,
cover them and stand for 24 hours.

g. The next morning, pour the water,
out to a clean glass,
and drink it.

h. I add water again, and do the same.
Let them stand for another 24 hours.

i. Drink the water, and the used seeds are good,
for the ground.

Note:When the water smells sweet,
then it is successful. Otherwise; must pour them away,
and make new.

Vegetarian recipes are just like the low fat recipes.
You can present them in many different attractive ways.

Here, I show you more simple recipes:

Chinese New Year Food
Vegetarian Rolls

1 piece bean curd sheet
carrots (strips)
Black fungus (strips)
Lily buds
Black mushrooms
1 tablespoon cooking oil

a. Wash and soak carrots, black fungus,
lily buds and mushrooms till very soft.

b. Drain them and cut into thin strips.

c. Heat the wok and fry all,
till soft and let cool.

a. Clean carefully the bean curd sheet,
with a clean damped towel to remove the excess salt.

b. Cut the bean curd sheet,
into several smaller sheets.

c. Wrap the vegetables in the sheet,
and roll it up like spring rolls.

d. Lay good on a plate to get ready,
for deep frying.

e. Heat the oil to very hot,
and fry till golden brown.
f. Drain and dish.



Some dipping sauces

Peanut Sauce A

Ingredients A
160g fresh peanuts
a. Wash the peanuts, and stir fry,
on low fire.

b. Grind them.

Ingredients B
2 tablespoons olive oil
1 tablespoon water
2 tablespoons molasses

a. Add water to the oil,
and beat into paste form.

b. Add molasses.

c. Mix A and B mixtures together,
and beat until smooth.


Vegetarian Recipes

Peanut Sauce B

2 tablespoon miso
4 tablespoon peanuts sauce
1 teaspoon ginger (grated)
120 ml cold drinking water

a. Mix all. And add into all kinds,
of vegetables,
when desired.

b. When use on salads,
may add more water.

Almond Cream

80g American almonds
80g peanuts
2 tablespoons olive oil
1 tablespoon small rock sugar

a. Add water to the olive oil,
and put in the juice mixer,
to beat into cream form.

b. Add sugar.

a. Soak almonds and peanuts,
in the cold water, till soft.

b. Remove the skin, and ground them.

c. Mix All together, till smooth.

Cucumber Sauce

Sesame oil

a. Wash the cucumber, cut it,
into small cubes.

b. Mix in a little salt,
and leave it for 10 minutes.

c. Add the rest, and put them,
in the juicer and grind a little (not too fine).


What about some low fat vegetarian recipes?

Okra Salad

Some okras (stringless)
Some sweet Peppers
Dressing sauce
Vegetable oil

a. Cut the ends and stalks,
from the okra.

b. Cook them in boiling salt water.

c. Drain and lay them,
in a salad bowl.

d. Pour peppers into hot oil,
peel off their skins.

e. Cut them into strips.

f. Add them to the okras,
and cover them with the dressing.

Lemon juice
Olive oil
Curry powder or other spices

Mix all together.


Vegetarian recipes

Chestnut Salad


a. Parboil the chestnuts ten minutes,
and remove the shells.

b. Cook them in boiling water,
until just soft.

c. Remove the brown skin, cut 1/2 cm slices,
moisten, with dressing.

d. Arrange them on cup shape lettuce leaves,
and cover them with mayonnaise.


Onion Salad


a. Arrange thin slices of onions,
in nests of lettuce on a shallow dish.

b. Cover with Dressing.

Fig sandwich

1 cupful figs
125 ml hot water
1 teaspoon lemon juice
Fine chopped nuts

a. Place figs in pot, and cook,
to a paste with the water.

b. Add juice, and set away to cool.

c. Spread on the prepared bread,
and dust with the nuts.

Mustard Sandwich

3 teaspoons dry mustard
3 teaspoons dry chilli powder
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon vinegar
1 tablespoon olive oil

a. Mix all until smooth and cook,
over hot water until smooth.

b. Let it cool, and bottle,
for sandwiches.

3 tablespoons paprika
1 tablespoon cumin
1/2 tablespoon cayenne or chilli
1 tablespoon bay leaves

1.5 tablespoon corriander
1/2 tablespoon fenugreek

1.5 tablespoons cumin

Spices B-Curry Spices Two
1 teaspoon cinnamon
1/2 tablespoon fenugreek
1 teaspoon cumin
1/2 tablespoon basil
1/2 teaspoon cardamon
1/8 teaspoon nutmeg
1 piece clove
1/2 teaspoon thyme

Spices C
1/2 teaspoon cinnamon
1/2 teaspoon cayenne
1/2 teaspoon nutmeg
1/2 ginger powder
1/2 tablespoon whole clove

a. Mix all together, grind them.

b. Store them in glass bottles,
for longer use.

c. May use them for seasoning,
add in dressing sauce,
in soup for flavour.

Chinese Black Bean Soup

150g black beans (soak over night)
Some celery or other greens
1 cm big kelp
1000 ml water
Some spices
2 teaspoons miso

a. Boil the beans and kelp in water,
until half cooked.

b. Add the rest, and last miso.

Note: You may use any type,
of bean instead.


Chinese Lentil Soup

red carrots (diced)
Lentil (sprouted)
Curry powder
Miso to taste

a. Add oil, stir fry the curry powder,
with carrots.

b. Then add in beans, water,
and cook till soft.

c. Add miso or light soy sauce,
to taste.


Squash Soup

Butternut Squash (diced)
Peanut sauce

a. Cook squash with water,
till soft.

b. Add peas and peanut sauce.

Chinese Stir-Fry Cabbage

1 cabbage
1 broccoli
50g snap beans
1 squash
1/2 tablespoon vegetable oil
2 teaspoons curry powder
2 teaspoons miso

Wash and cut all vegetables,
into strips.

a. Stir fry the curry powder,
with oil, till fragrant.

b. Add all the vegetables,
stew on small fire till cooked.

c. Last add miso.

Note: You may just steam the vegetables,
with water instead of oil.


Dutch Red Cabbage

Ingredients A
1 red cabbage (cut medium fine)
4 apples (quartered)
6 whole cloves

Ingredients B
3 tablespoon butter
1 tablespoon vinegar
1 teaspoon brown sugar
1 teaspoon salt
1 tablespoon currant jelly

a. Cook A for 45 minutes, and drain. Add B.

b. Heat well and serve.

Chinese Wheat Porridge

2000 ml water
1/4 cup wheat seeds (soak over night)
1/4 brown rice (soak over night)
10 black dates (removed seeds)
sugar to taste

a. Put all ingredients in a pot, and boil on medium fire.
b. Once boiled, adjust to low fire, and cook for 1.5 hours.
c. Add sugar to taste.
d. Serve hot.


Vegetarian Dumpling

Ingredients for filings
Dried mushrooms
(soak till soft)
Black fungus
(soak till soft)
Red carrots
Canned asparagus

Wash all the ingredients, and cut them,
into thin strips.

Ingredients for the wrap
250g wheat starch
200g corn flour
800 ml water
1 teaspoon salt
2 tablespoons oil

a. Mix all the flour in a bowl.

b. Cook water, oil, and salt together,
in a pot.

c. When water boiled, pour the flour,
into the hot boiling water.

d. Stir hard, till all mix evenly.

e. Then cut them into thin slices,
and stuff the filings in.

f. Steam for 10 minutes on large fire.



Nut Bread

220g sugar
1 tablespoon oil
2 eggs
160g chopped nuts
480g flour
500 ml soy milk
1 tablespoon baking powder
1/2 teaspoon salt

a. Preheat 200°C oven for 10 minutes.

b. Mix everything together,
in a mixing bowl.

c. Let it rise for 30 minutes.

d. Place them in a greased baking pan,
on the middle shelf,
of the oven.

e. Bake for 45 minutes.

Chinese Dessert-Sweet Soup

1/2 cup lotus seeds
1/2 cup white fungus
1/2 cup red beans
1/2 cup peanuts
1/2 cup chestnuts
6 cups water
Honey or red sugar to taste

a Mix all, add water, and cook,
on low fire, till cooked.

b. Add sugar to taste.

Note: You may add more water,
when desired.


Chinese Dessert-Sago Soup

1/2 cup sago (soak till soft)
1 egg yolk (beaten)
1000 ml boiling soy milk

a. Wash sago, add it,
to the boiling milk.

b. Simmer till the sago is dissolved,
and forms into jelly.

c. Add egg yolk, and serve.


Chinese Dessert-Steamed Eggs

2 eggs
2 teaspoons sugar
150 ml soy milk
1/2 teaspoon ginger juice

a. Beat the eggs in a bowl.

b. Add sugar and beat again,
till even.

c. Mix in milk and juice.

d. Steam it in a double boiler,
for 10-15 minutes.


Banana Jumbles

4 bananas
2 cups rolled oats
1 cup raisins
40 ml olive oil
1/4 teaspoon sea salt
1 teaspoon vanilla extract
1/2 cup chopped walnuts
cinnamon powder

a. Preheat 180°C oven, for 10 minutes.

b. Mix all together and season,
for 15 minutes.

c. Drop by teaspoonfuls onto the baking sheet,
and dust with the cinnamon.

d. Bake for 15-20 minutes,
and serve hot.
